Slaughterhouse Paddock is the second oldest block of vine in all Heathcote, originally a cattle yard adjacent to the township meatworks, its soils enriched for viticulture by the passage of livestock. Hand picked whole bunches are open fermented in the traditional old world style, building sound structure and infusing splendid weight of fruit. A fleshy Terra rosa palate of intensity and concentration, preceded by peppermint and eucalypt perfumes, adorned by the dulcet vanilla sweetness of new American oak.

The pick of elite vineyard Adelaide Hills Pinot Noir, a precious parcel of heirloom clones of course, planted to a single, bespoke site of propitious free draining quartz slopes. Whole bunches of fruit are traditionally open fermented and basket pressed, treated to the top cut of French coopered oak, bottled unfiltered and unfined. Its perfume of pudding fruits, punnett of ripening cherries, boysenberry and mossy forest floor, sheathed behind a veil of oaken vanilla cedar and freshly milled spice.

From a sensational block of Touriga in Willunga basin, the laboriously manicured vines are trained to yield fruit that's destined for a decidedly old world style of vinification. Fruit is sorted bunch by bunch for a course of natural open ferments, basket pressed into a selection of well seasoned French oak barriques for a tasteful and timely nine months. Its bullish tannins in support of lifted Earl Grey florals and cherry blossom perfumes, plush and perfect dark fruit flavours, tensioned by fine, etching acid line. A big Touriga style that unwinds and blooms within a big wine glass.

The Canberra district is well known for its temperate climes, briskly invigorated by the salty ocean breezes known as Bateman's breath, its surrounds are so very similar to the venerable viticultures of Bordeaux. Ken Helm planted Cabernet Sauvignon vines here in 1973, coddled since establishment and husbanded by Helm, they yield the most exquisite harvests. An old world style of winemaking encourages the fruit to speak for itself. Matured two years in a luxuriously high proportion of new French oak, a bed of firm ripe tannins underpin a compelling construct of our nation's, most capital Cabernet.

Cabernet Sauvignon has always been a speciality of Helm. A trip to Bordeaux inspired winemaker Ken Helm and grower Al Lustenburger to perfect the most profound constructs of Cabernet Sauvignon. The Canberra district is perfectly suited to growing this noble grape, as the mesoclimes, so similar to those of Bordeaux, are influenced by trade winds during summer which carry a whiff of sea salt and stimulate the vines. Helm's inaugural vintage immediately attracted praise from the industry press and claimed significant wine show awards.

Ken Helm and daughter Stephanie are a father and daughter team, the fourth and fifth generation descendants of migrants from the Rhineland who established vineyards near Albury and Rutherglen in the 1860s. Papa Helm has been involved in the development of the National Wine Show, Cool Climate Wine Show, Wine Press Club of Canberra and numerous promotional events for the Canberra region. Helm craft their Cabernet Sauvignon in the statuesque style of the great Medoc growths. The finished wine is released after two years maturation in a selection of seasoned and new oak casks.

Deep garnet red colour. Bramble bouquet with hints of loganberry, violets and licorice over lightly smoked oak. A finely balanced and elegant wine with the richness of berry fruits and butterscotch flavours deriving from two years maturation in oak casks. Fine tannins provide another dimension to the wine. A long, dark fruited finish with lingering notes of savouryness, cassis and dusty Medoc oak.
