Devils Creek runs along the base of Mount Buffalo, providing a precious source of water to replenish vines which yield the most splendid harvests of Alpine Valley Merlot. The creek was famous for disappearing underground some years and welling up again in plentiful supply during others, leaving the exasperated locals to liken it to the devil himself. A vibrant cherry red wine exuding lifted ripe plum and chocolate notes. Fully flavoured with a hint of cool climate spice and fine oak integration. Who knows, a few glasses of Devils Creek may bring out the devil in you.

Established in 1982, the Michelini Vineyard is perched in the Buckland Valley between the snow capped peaks of Mt Buffalo and the pristine crystal clear waters of Devil's Creek. The Alpine winters and cool summers nights characteristic of this secluded valley provide ideal conditions for maturing premium grapes. Yield is regulated on the ten hectares Merlot blocks by removal of secondary shoots prior to flowering, and by removal of excessive bunches per shoot at veraison. Leaf removal in the fruiting zone is carried out to improve exposure to sunlight. Devil's Creek develops lovely charry vanilla characters and the gentlest of tannins from a spell of ageing in fine French oak barrels.
 
Medium cherry hues. Lifted ripe plum and chocolate notes, elegant bouquets of berry and spice. Just so soft on the palate, velvety textured and yet quite naughty! A sweeter style of Merlot which you simply must try chilled for a refreshing change.

There really is a Devil's Lair, an ancient archeological treasure trove which has revealed significant fossils of ancient Australian fauna. Not too distant from the site, the vineyards of Devils Lair are stimulated by a strongly maritime influenced climate, not dissimilar to Bordeaux, hence the stellar quality of Cabernet Sauvignon. The viticultural team source a significant proportion of outstanding quality fruit from Wilyabrup in the north, where the warmer influence of the Indian Ocean consistently produces elegant and beautifully ripe Cabernet Sauvignon with the finest, genteel tannins.
 
Dark, deep magenta red. Blueberries and bramble nose, violets and dusty herb, Crème de Cerise and cassis. A velvety palate of dark baked cherry flavours, intensely perfumed purple fruits, loganberries and jet black currant, supported by a sound structure of refined tannins and satisfying walnut oak. 9th Chamber is all about the harmony of tannins and layers of flavour, a balance that makes great Cabernet Sauvignon.

Devil's Lair are auspiciously positioned at the heart of Leeuwin Peninsula, within the dress circle of Margaret River's most eminent wineries and prestigious vineyards. The climes here are very like the balmy maritime conditions of Bordeaux, red varietal grapes are intensely flavoured and lined by the finest tannins. There is a folklore of hidden caves and devilish marsupials which sets the background to Devil's Lair cryptic range of wines. A mostly Cabernet accord with a third of Shiraz, Hidden Cave is seamless and redolent, in opulent Margaret River claret styling.

Devilish thinking is not only encouraged, but celebrated at Devil's Lair. The Hidden Cave range is all about the established style of wines that Margaret River does best, cannily crafted with a slightly devilish twist. The viticultural team are charged each year, with the mission of assembling the finest Margaret River harvests to fashion articulate regional wines. Parcels of Cabernet Sauvignon and Shiraz are treated to a crush and term of cold soak, inoculated in controlled fermenters and vinified at closely managed temperatures. Upon completion of ferments and a course of malolactic, batches are filled to a selection of seasoned French oak barrels for a year's maturation.
 
Rich purple with garnet hues. A nose that's instantly recognisable as Margaret River, cassis and cigar box notes, black and blue berries. A currant and brambleberry flavoured palate, fine elegant tannins are woven around a core of sweet black cherries and cassis. A wine that evolves in the glass as layers of fruit awaken. A lingering spice on the intensely aromatic, berry filled finish.

From plantings dating back to the late 1970s, older well established vines on free draining silty clay loams, yielding fully ripe Pinot Noir grapes with concentrated characters and exemplary varietal expressions. The superlative sites are managed by viticulturist Ivan Sutherland, the fruit is vinified into a robust Burgundian styling by James Healy, both contributed to the genesis at neighbouring Cloudy Bay. An ambitious collation of Dijon clones 777, 667 and 115, Pommard clone 5, Abel and 10/5 from the illustrious Dog Point Vineyard.

Ivan Sutherland owns extensive Marlborough vineyards and supplies fruit to many of Marlborough's most recognizable labels, the cream of the crop is reserved for Dog Point. The philosophy at around the winemaking operation involves nothing less tham total involvement by the stakeholders, from the vineyard and nurture of the fruit, throughout the entire winemaking process, whilst aiming to preserve the distinctive style and regional expression of Dog Point wines. Following the harvest and crush, fruit is inoculated through the action of wild indigenous yeasts and vinified for two to three weeks, followed by transfer to a selection of seasoned French oak barriques for eighteen months maturation.
 
Deep ruby colour. Aromas of vibrant ripe red fruit imbued with hints of violet over subtle smoke and earth nuances supplemented by spicy oak savouriness. Richly flavoured with intense red fruits, well balanced subtle sweetness and spicy well integrated oak to a delicate, lingering finish. To accompany rare duck breast or truffled venison pie.

Shiraz from the Chandon Colbinabbin Vineyard at Heathcote, an auspicious confluence of terroir and clime unlike any other in the world. Deep ferrous soils punish the vines into digging deep for their moisture, infusing grapes with the most ardent, stately tannins. The peaks of Mount Carmel Range further serve to conduct chilling southerlies along fortuitous longitudes, very like the Mistral winds of Vallee du Rhone. Easterly aspects moderate afternoon heat, so essential for an idyllic ripening of Shiraz grapes with extraordinary concentration of flavour.

Bunches of estate grown grapes are destemmed and crushed, chilled and treated to three days of cold soak. Regular pumpovers are applied to ferments throughout the course of vinification, gently extracting colour, flavour and tannin while building body in the wine. A portion is transferred to oak and fermented to dryness, another is set aside and settled for several days of rest, a third remains on skins for an extended maceration. After pressing, all parcels are run to a mix of seasoned and new French oak barriques for completion of malolactic and maturation. After fourteen months, the best barrels are assembled into the finished wine and sent for a further six months of age before bottling.
 
Deep red colour, bright purple hues. Radiant perfumes of berry compote, blueberries and blood plum fruits, liquorice and liqueurs, seasoned by Asian five spice, cacao and carob. Juicy berry fruit flavours flood the palate, piquant spiced plums, cured meats and savoury complexity. Fine, silky tannins throughout, a memorable, everlasting finish. A match to game roasts and corned beef.
