The winemaking team's commitment to sustainable vineyard management practices, limited irrigation, compost and mulching regimens continue to yield harvest of the healthiest, small but intensely flavoured grapes. Batches of Shiraz are treated to a term of maceration for the extraction of colour, tannins and flavour. A controlled vinfication is followed by twelve months maturation in a combination of new and seasoned French oak barrels before assembling into the final wine, to be initiated for secondary fermentation in bottle in the manner of Methode traditionelle.

A brilliant deep ruby red with creamy purple/ pink mousse. Attractive rich raspberry and spice aromas. The palate offers delicious flavours of red and black berries, currants, cherries and plum supported by French cocoa vanilla oak, lively tannins and elegant spice. The rich beautiful dark fruit characters are balanced by excellent acidity which keeps the palate fresh, it finishes pleasingly long and dry. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. The goal is to ensure that the finished wine defines Great Western, retains good balance, elegance and refinement.

The multi vintage Black Chook sparkles to the tune of an effusive, opulent persona, predominantly three to five year old Shiraz wines, aged in a combination of seasoned French oak barrels, where they develop layers of smooth integrated fruit and a rich weighty texture across the palate. While the Bleasdale wineworks are steeped in tradition and local folklore, the estate has installed the latest technology, still maintaining the founding philosophy of producing honest, consistent and reliable wines. From time to time, the Bleasdale team draw on stocks of maturing wines with the requisite qualities to construct a luscious Sparkling Shiraz. The complete course of methode traditionelle is followed by a term of bottle age beneath the Bleasdale cellars.

A mostly Shiraz Cuvee sourced from six of the Melton's best dry grown, old vine blocks. Charlie was one of the first to recognize the value and tradition of the Barossa's old vineyard Shiraz, Cabernet and Grenache. At a time when others were pulling out some wonderful old rootstock to plant more fashionable varieties, Charlie was convincing farmers to keep their historic vineyards. He belongs to a small group of dedicated vignerons who fought to retain the viticultural heritage of Barossa Valley. Two years in oak, followed by liqueur dosage tirage and a further four years on lees.

$7999each $959DOZEN EACH DOZEN The fruit is mostly hand harvested at healthy levels of ripe, natural sugar baume range to give richness with a degree of freshness and acidity for the base wine. Grapes are fully destemmed through the crusher into fermenters, for vinification on skins at moderate temperatures for several days, treated to a regimen of pumpovers twice daily. At close to dryness, batches are drained, pressed and returned to the free run. Components are filled to a selection of predominantly French Never and Vosges or American oak barriques for a year on gross sediments. The wine is then tiraged and left on lees for twenty months before degorgement and expedition liqueur.

Deep dark, cherry purple. An elegant, complex bouquet, rich spicy, multi dimensional redolence, mintyness, dark currants and festive pudding fruits. A complex, aromatically opulent cornucopia of flavour, bushels of fruit and classic autolysis within a glorious effervescence of the finest bubble. The wonders of liquering dosage and bottle age, modulating the degree of sweetness, in the tradition of the memorable Great Westerns which evolved for decades.

To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Crafted to the traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second ferment in bottle. This is what creates the sparkle, infuses complexity and introduces texture.
