Bellarmine Chardonnay 2008

Bellarmine jugs were used throughout the middle ages to carry wine from oak cask to table. The terroirs and clime around the Bellarmine vineyard at Pemberton are a Chardonnay maker's dream come true. The soils are red gravel laterite which provide excellent drainage while providing warmth to the vine root systems at night, courtesy of the sunshine that the gravels have absorbed during the day. Juices are gently pressed off skins and separated from the harder fraction so that the pressings can be fined prior to re-combining with the free run for fermentation. All components are cold settled over forty eight hours then racked to tank away from the solid lees for inoculation. After a few days, a portion is transferred to oak for fermentation, the remainder being vinified in tank. Fermentations are carefully temperature controlled to achieve a gradual drop in sugar levels and to retain the maximum possible flavours. Upon completion, the wines are batonage stirred on yeast lees to give some extra complexity and a touch of creaminess to the wine. Matured in a selection of new and seasoned French oak barrels
 
Pale yellow colour. Green apple, nectarines, subtle oak and attractive bready characters on the bouquet. Full complex palate with ripe apple, nectarine, and peach flavours. Subtle spicy oak, tight acidity, a slightly creamy texture with minerality and a crisp clean finish. A lightly wooded dry white wine made in the Chablis style. Enjoy with crispy skin roast chicken and good wet cheese. Harvested at optimum flavour levels when the tannins are ripe and the seeds are brown, determined by the winemaker taking regular samples in the vineyard. Fruit is managed carefully to ensure a maximum yield of five tonnes per hectare, to achieve even ripeness and maximum quality potential. Crushed and destemmed gently to allow some whole berries through into the ferment, the must is inoculated with a neutral yeast. Once the cap of skins has risen, the juice is pumped over the skins twice daily so that colour and flavour is extracted from the skins as the ferment cools. Once complete, the wine is racked and seeded with malolactic bacteria. Matured fourteen months in new French oak barriques. Approx 15.0%
 
Deep purple red. Rich ripe aromas of mulberry and chocolate with spicy oak and plum fruit characters. Rich and savoury plum and berry fruit on the palate are supported by fine tannins. In the Rhone style, a rich yet elegant, cool climate dry red Shiraz. "Black/ strawberry/ cherry characters are interwoven with hints of coffee, mocha and bitter chocolate, while the fresh ground pepper and liqueured fruit are enhanced by lightly toasted, cedar oak. Bellarmine Riesling 2010

Bellarmine are expert at Riesling and famously makes three different interpretations, each with its own story and appeal. One of very few vineyards in Pemberton to grow the varietal, no doubt indulging the German ancestry of proprietors Dr Willi and Gudrun Schumacher. Grapes are exclusively sourced from the estate property, planted by hand in 2000, vines are trained to receive maximum exposure from sunshine during the ripening season. Vineyard soils are red gravel laterite and vines are trained to vertical shoot positioning. Grapes are harvested in the cool of the night at optimum flavour levels. Vinified from the first free run juices taken after the initial crush and from the light pressing of skins. The latter component contributes greater depth of ripe flavours which suit the slightly sweeter style. Fermented in tank at cool temperatures so that oak is avoided and the natural expression of fruit is optimised. Sudden chilling of the tank occurs when the wine has only about one baume of sugar left to convert into alcohol. This stops the yeast cells and achieves the slightly sweeter palate so very appealing to enthusiasts of complex and engaging Riesling wines
 
Pale straw colour. Lime and spice on the bouquet. Aromatic, slightly sweet, yet crisp, elegant white wine. Perfectly palate balanced and with elegant lime flavours. Enjoy this captivating style with moreton bay bugs or WA marron in a mornay cheese sauce. "A clean, perfumed nose of musk, floral notes, stonefruit and citrus. Very good balance between some slightly tangy acid and the sweetness from some residual sugar on the palate. Bellarmine Vineyard was planted in 2000 and is owned by a German doctor, Dr Willi Schumacher and his wife Gudrun Schumacher. The Schumachers are passionate about great wine and searched the world for a place to plant vines before they chose what has become the Bellarmine property. The vineyard is an elevated site with gravelly laterite soils. Since the first vintage in 2004, Bellarmine has been consistently producing stunning wines. Bellarmine Wines is rated 5 stars out of five by renowned wine reviewer James Halliday.

Named after 15th Century made jugs used to carry wine from oak cask to table, the labels show etchings taken from Bellarmine jugs. Bellarmine Wines is a couple’s dream come true. They’d like to share their dream with you.

Dr Di Miller has been making wine since 1999. Before this she enjoyed working in mixed and small animal practice as a veterinarian in the U.K. and Australia. Di is passionate about wine and about her work for Bellarmine which she sees as a very high quality vineyard that produces restrained, savoury wines full of flavour and balance. “Each year the wines get better and better”, enthuses Di, who has made the wines for Bellarmine since they began production in 2004.

Di also manages the Bellarmine wine company which she has done since July 2008. Prior to this she was Senior Winemaker and Manager of the highly successful contract winery, The Vintage Wineworx in Porongurup, Great Southern. In 2007, Di was a State finalist in the Telstra Businesswoman of the Year Awards. Now in her second year of the Master of Wine course run by the London Institute of Masters of Wine, Di has enjoyed the opportunity to travel to Bordeaux, Burgundy, Champagne, and the Rhone Valley in France and Ribera Del Duero, Rioja, Jerez, and Madrid in Spain.
