Tapestry The Vincent Shiraz
McLaren Vale
A selection of the finest barrels, Vincent is crafted from Shiraz picked off vines up to forty years of age, very close to Kangarilla Road and the Clarendon Hills, specifically Bays 3 and 4, planted to the elite Bakers Gully site in McLaren Vale, which yields a scant tonne per acre. Vincent is a richly flavoured wine, it begins with a harvest of exceptional quality Shiraz, treated to rigorous selection and an extended maturation. The most stringent standards are applied, the top barrels of vintage, crafted to reflect truth in regionality and pure varietal expression.

The finest grapes are selected from a single elevated block within the vineyard, grown to tough ironstone based soil types. Fruit is inoculated and vinified in traditional fermenters, followed by two years maturation in a selection of new and seasoned, exclusively French oak hogsheads. A mere few hundred dozen are produced annually. Decant before service to remove harmless crust.

Deep red colour, purple hues. Concentrated dark cherries, soft leather and shoe polish, all in a very good way, smoky, slightly charry oak. Coffee beans, chocolates and leather, cigar leaf notes over soft tannins, structured with refined acidity and exquisite balance. Dry finish and excellent length, an outstanding expression of McLaren Vale which lives and breathes to be mated alongside fine cuisine.

Tapestry XV Barrels Cabernet Sauvignon
McLaren Vale
A vineyard with a long and proud history, closely connected to Krondorf and Grant Burge, Tapestry is at the very heart of McLaren Vale. Planted in the 1970s, the property's rich ironstone soils and cool coastal climate provide ideal conditions for producing well structured and richly flavoured wines of exceptional quality. A silky, elegant Cabernet Sauvignon in the traditional McLaren Vale style, dominated by black currants and cassis, red capsicum and roast peanut notes, oodles of bramble and black jube, a flourish of cedar and tobacco on the velour tannin finish.

Lewis & King retain access to the finest Nebbiolo in the land, a style of wine that achieves amazing intensity and refined elegance on the ancient ferrous soils of Heathcote.

Tar Roses Heathcote Sangiovese
Heathcote
Available in cartons of six
Sangiovese is a thin skinned grape, known for its savouryness and earthy characters as opposed to ripe berry fruit flavours. It shows an attractive red colour and can be characterised by high levels of tannin supported by ripe acidity. Sangiovese vines are well suited to soils with good drainage and abundant sunshine, both of which are found aplenty at Heathcote. The red wine of choice to accompany veal, prosciutto and sage or piquant chorizo recipes.

Sangiovese is harvested into 2½ tonnes steel bins, crushed into static fermenters and pumped over twice daily for twenty minutes each time. Temperature and acid levels are monitored constantly and adjusted as necessary, upon completion, batches are treated to an air bag press and racked off gross lees, followed by transfer to barrel for malolactic and a year's maturation in a selection of seasoned French oak barriques, topped up each month, as the angels take their share.

Ruby red colour. Earth and clay nose with mulberries, cooked rhubarb and licorice. Damp earthy aromas with mocha and chocolate over assertive tannins, good fruit sweetness and pleasant acidity. A lingering finish expressing savouryness over persistent, mouthfilling powdery tannins. Will match goats cheese or baked parmesan and onion flan.

Tar Roses Miro
Priorato Spain
A complex assembly of Grenache and Carineña grown to the Denominacio d'origen Priorato, espoused by an equally stirring addition of Syrah and Cabernet Sauvignon. Priorat is a long forgotten winegrowing area, highly salubrious in its time, it was ravaged by phyloxera and abandoned in the nineteenth century. The rocky, steeply sloped, mineralite soils have been rediscovered by Don Lewis and Narelle King, who take time out from their operations in Victoria once a year to vinify the parched and precious fruit of Merum Priorati.

Older bush vine Grenache and Cariñena as well as younger trellised Syrah and Cabernet, added for complexity, balance and structure. The older vines are all dry grown while the younger vines have access to irrigation which until recently was banned in Spain. Each individual vineyard and in some cases, each variety within the vineyard, were vinified and matured in separate parcels before being carefully selected for the final assemblage. Hand plunged four to five times a day in 1.5t open fermenters, then pressed out using a wooden basket press and left to settle overnight before transferring to barrel. Treated to twelve months maturation in a combination of new and prior use French oak.

Bright cherry red, pink hues. Rich sweet bouquet of plums, mulberry and slatiness, seasoned by hints of aniseed and wild thyme. Sweet raspberry fruit up front on the palate, licorice chocolates, the wine flows beautifully along, offering fine tannins, good acid and excellent flavour balance, great structure and mesmerising length.

Tar Roses Shiraz
Available in cartons of six
Winemaker Don Lewis adores the tannins, structure and electrifying expressions of Spanish wine. Fruit for Tar & Roses is harvested off elite Heathcote vineyards, much of which must be hand picked, all components are treated separately throughout ferments and ageing. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher gravelly, grantic soils. The first component makes a rounder, fuller fruit driven wine with intense chocolate and earth characters, the latter contributes elegance and restraint.

A mostly Heathcote Shiraz, with a smaller component of fruit harvested off superior vineyards further afield. Bunches are crushed and destemmed into vinimatic fermenters, pumped over thrice daily and closely monitored for tannins, acidity and extraction. After ten days vinification, batches are pressed and racked off gross lees into a selection of seasoned and new, French oak barriques for completion of malolactic and a year's maturation.

Deep crimson colour. Intense black cherry aromas coupled with lifted raspberry notes, a compote of summer berries. Supported by hints of vanilla, chocolate and earthy complexity. Sweet black cherry fruit flavour with chalky cocoa/ chocolatey tannin. This, plus good acid and length makes a well balanced palate. A match with char grilled lamb cutlets and sugo pomodore.
Tar Roses Tempranillo
Heathcote
Available in cartons of six
A pure Tempranillo wine by one of Australia's most passionate protagonists of the style. A native of arid Italianate climes, Tempranillo achieves complete ripeness in the ferrous soils of Heathcote. Challenging Terra rosas and moderate seasons reduce vine vigor to yield limited parcels of intensely flavoured fruit. The talented team at Roses & Tar share a passion for the torrid Spanish varietals, closely managing their Heathcote sites to yield the finest possible Tempranillo. Match with spicy pork and fennel sausages.

From Don Lewis and Narelle King's Heathcote property, vinified alongside a component from a second choice Heathcote site. An early ripener, fruit is picked over the course of several days according to parcel ripeness and treated as a single batch once brought to the winery. Grapes are crushed and de-stemmed into a vinimatic fermenter and spun twice daily. Temperature and acid levels are constantly monitored throughout the vinification, upon completion the wine is treated to an air bag press. Racked off gross lees and transferred to barrel for a course of malolactic and maturation in a combination of new French oak and older barriques for a year.

Brilliant deep cherry red colour. Rich raspberries and cream bouquet with nutmeg and minerally notes. A fresh sweet palate, black cherries and a touch of tartness nicely balanced by chalky tannin, fruits burst over classic chalky tannin, well balanced by rhubarb astringency. Lingering prune plum flavours and great palate weight extend all the way to the finish.
