Jean-Marc Brocard often considers himself to be a servant of nature, he is unswerving in his determination to offer beautifully made Chablis in all of their purest forms. Each Brocard wine is a Chablis, first, foremost and last, wines which are some of the most beautiful and consistently characterful Chardonnays around. The cool mineral discipline of the generally lean Chablis soil and it'sclimate, ultimately tightens and structures the beautiful and complex Chardonnay grapes. Long time winemaker Clotilde Davenne, enjoys the enviable task of crafting the precious Domaine St Claire Chardonnay grapes to express their renowned place of origin. This is the classic attitude of terroir, a place that expresses itself in the wine, through the wine. Starting out in the early 1970s with just one hectare of Chablis vines, Jean Marc has built up to a formidable 120 hectares which supplies most of his needs. The annual purchase of new oak is only a few barrels a year and this tells a lot. Grown on slopes which are shared with the tiny more exclusive Premier and Grand Cru sites, either side of the Serein River valley in which the town of Chablis itself sits. Approx 12.5%
 
White green colour. The nose is fine, delicate, on notes of white fruits, cherry plum and crystallized citrus fruits. The mouth reveals spicy and slightly acid notes, on candy aromas (candy stores). A thirst-quenching wine, the dry oceanic winds, sultry seasoned wood, cheese aromas and trademark chalkiness continue on to that lively cleansing Chablis finish. A Brocard Chablis has to reflect the varied soil profiles of the region and with very little intervention. Chablis is a crisp dry white which embraces specific food matches, ideal with sauced white meat dishes and firmly fleshed fishes. The quintessential aromas of cereal, mineral and citrus are there, the palate is tight but not as severe as fuller bodied whites of the region
