Penfolds Bin 2 Shiraz Mataro

The abstruse Bin 2 saw its inaugural vintage in 1960 but was discontinued until the 1970s. Originally branded as an Australian Burgundy, Bin 2 has always been a soft, medium bodied mix of Mourverdre and Shiraz characterised by complexity and palate grip. Treated to a year's maturation in seasoned French and American oak, its succulent, juicy and fresh Rhônesque orientation is underpinned by an alluring savoury base of quinces and date pudding, decidedly old world in styling, the understated affluence of Bin 2 demands deliberation and calls for cuisine.

The relationship between Penfolds and the cool climate, higher altitudes of the Adelaide Hills goes back to the company's origins. Dr Penfold established his winemaking venture at Mackgill in 1844 to make Grenache wines which he would prescribe to patients. Exclusively hand picked grapes, with the inclusion of some whole bunches for complexity, are cold soaked and crushed before the free run juices, to the exception of any pressings, are naturally fermented followed by a single racking off gross lees. The finished wine is matured eight months in a combination of new and seasoned French oak barriques, before bottling, filtered but unfined.
 
Dark cherry red. Cherries and dark bramble fruits abound with attractive forest notes and lingering warm spice Subtle charry oak adds additional complexity in a discreet manner, leaving the bright fruit nuances to remain at centre stage. Strawberry and red berry fruits coat the mouth on a bed of soft tannins. A long and persistent finish that lingers and lingers, the wine's silky texture leaves the palate yearning for more. Bin 28 is back! Not that it ever went away, just in case anyone was wondering, but it's always worth a wait. Kalimna 28 is a showcase for warm climate Australian Shiraz, ripe, robust and generously flavoured, rich and cakey, without reliance on new oak or any excessive alcohol. Barossa Valley provides a substantial proportion of fruit, it is also home of the eminent Kalimna Vineyard, whence Bin 28 acquires its moniker. An enduring ambassador of the timeless and profound Australian Shiraz style, showing all elements in complete resonance.

A pure Shiraz, multi vineyard, poly-district blend, with a long history of memorable releases. Introduced as one of the first Penfolds Bin wines, Kalimna 28 has become an Australian classic. Indeed this style enjoys universal appeal because of its intensity, definition and fruit, ripe fleshy palate structure and generosity of flavour. A selection of grapes is picked off healthy vines, yielding the requisite quality of fruit, showing optimal flavour, typicity and vibrancy, grown to superior vineyards in Wrattonbully and McLaren Vale, Upper Adelaide and Barossa, Padthaway and Langhorne Creek. Following vinification and asssemblage, Bin 28 is treated to thirteen months in a selection of prior use American oak hogsheads.
 
Dense plum red. Currant and glacéed fruit, cherries, almonds and musk. Even and balanced across the palate, freshness and juiciness over soft supportive tannins, mousse textured, milk chocolate/cannoli custard flavours, chocolate milkshake sans malt. Bin 389 epitomizes the Penfolds winemaking philosophy, vis a vis the artisanal craft of multi vineyard assemblage. Whilst the individual regional characters are completely integrated, it is ultimately the personality and structure of the fruit that really matters. Bin 389 is crafted to traditional methodolgies, Cabermet and Shiraz are vinified in headed down fermenters, some batches complete ferments in barrel to enhance the complexity, richness and integration of fresh new oak. Components are then matured in a high proportion of completely new American oak hogsheads for a year, many of the older seasoned barrels having conspicuously aged the previous vintage of Grange.
 
Dense deep red colour. Brimming with mochancoffee ground aromatics, heightened by black notes, appealing char and creamy, vanillin oak in the background. A flurry of fruits, spice and varietal markers abound. Voluminous and powerful, a sensory stratification of layers, unravelling flavours, festive pudding with roasted nuts, lamb and black olive, sarsaparilla spice. Tannins awashed, oak absorbed, fruit awakened.
Penfolds Bin 407

Developed by the legendary John Duval, Bin 407 could only be achieved after volumes of high quality Cabernet Sauvignon became consistently available, realising the opportunity for Penfolds to develop a pure Cabernet wine, as inspired by the flagship 707, albeit at a slightly more approachable entry level. Bin 407 is true to the enduring Penfolds style, a profound construct of Cabernet, featuring strong varietal character and solid structure with ripe fruit at centre stage. French and American oak, a portion of which must be new, is there in support.

Traversing the length and breadth of Penfolds endowment of elite sites, the winemaking team are sanctioned to identify the finest parcels for vinification into a pure Cabernet wine to rival the nation's finest. Many of these specialized Cabernet vineyards are well into maturity and there is now a rich source of world class fruit from which to draw. Providing a lovely contrast to the more powerfully structured 707, Bin 407 is a restrained and elegant style with fine tannins and underlying oak. A selection of fruit from Wrattonbully and Padthaway, McLaren Vale, Coonawarra and Langhorne Creek, is assembled and treated to fourteen months in a mix of seasoned and new French and American oak hogsheads.
 
Deep red, dark core. Mixed cues, scents of charcoal, black olives and meat pan scrapings, rosemary, a darkened veil of fruit, oak impacts, cedar and clove. Solid, generous, sweet middle palate, softened, integrated tannins, bereft of harshness. Generous amalgam of chocolate and smoked meats, blackberry and dates.
Penfolds Bin 707 Cabernet Sauvignon
Exceptional Langtons Classification. Bin 707 is the Cabernet equivalent to Grange, a wine of ripe and intensely flavoured fruit, treated to new American oak, the achievement of many decades commitment. Named by a Qantas marketing guru, Bin 707 was inaugurally vintaged in 1964 but was not made from 1970 to 1975, when the focus shifted to Bin 389, nor in 1981, 1995, 2000 or 2003, when fruit of quality and style was unavailable. Full bodied, with proven cellaring potential, Bin 707 is Australia's finest construct of multi vineyard Cabernet Sauvignon.

The winemaking philosophy and barrel maturation regimen of Bin 707 is almost identical to Grange. Bin 707 combines intense varietal definition with new American oak to produce a wine of great richness, harmony and concentration. Over the years the development of Bin 707 has mirrored the advances in Australian winemaking and viticulture. A collation of harvests this year from Coonawarra, Wrattonbully and Barossa Valley, from an almost perfect growing season, parcels were harvested after the March heatwave, albeit with a smaller than expected crop of high quality fruit. The finished Bin 707 was matured fourteen months in a selection of completely new American oak hogsheads.
 
Deep, dark beetroot red. Intense, almost pungent nose, textbook violet, Coonawarra cassis signing off on varietal regional DNA. Beetroot juice, raspberry and lavender ascend effortlessly, glaceed fruits and ground espresso coffee. Long and even palate, confident and firm. Massive fruits, blackcurrant and liqueur cherry, meshed red liquorice and raspy tannins. Could there be some Block 42 Cabernet concealed?! All in balance. Oak? What oak? 100% new oak 100% absorbed...

Penfold's mastery at formulating superlative Shiraz and Cabernet accords is due in great part to the excellence of their vineyards, achieved through the assemblage of components into a wine which delivers true stylishness in the enduring and timeless Penfolds way. Great attention is paid to the ripeness of fruit that goes into Bin 8, making the wine fuller in style and sounder in structure. Pointedly named for the distinction of its maturation in a selection of pre loved oak barrels which have held vintages of Bin 28, Bin 128 and Bin 389.

Medium deep brick red. Grange displays fully-ripe and intensely-flavoured Shiraz and some Cabernet grapes in combination with new American oak. Mushroom, orange marmalade aromas. Characters of prunes and citrus fruits, some meaty demi-glaze flavours, and tannins dominate the palate, a unique style recognised as one of the most consistent of the world's great wines. Winemaker comments by Max Schubert: Medium brick red. Chamomile, citrus peel and chocolate/berry aromas with a touches of soft leather. Very big and mouthfilling with sweet, stocky fruit and notes of tar, leather and nutmeg. Firm, gripping tannins and long finish. More structured style but still has a very good core of fruit sweetness.

Don Ditter, an early graduate of Roseworthy Agricultural College who joined Penfolds as a laboratory assistant in 1946, was appointed by Max Schubert as his successor in 1973. A time of considerable technical advances in winemaking the 1976, and the very great 1986 Grange, Don Ditter's last vintage before retirement, epitomize this remarkable period. 87% Shiraz, 13% Cabernet Sauvignon sourced from the Kalimna and other Barossa vineyards, Clare Valley, McLaren Vale and Modbury near Adelaide. Koonunga Hill has established itself as one of Australia's favourite Shiraz. Premium harvests from some of the finest vineyards are selected to maintain consistency, quality and style, a significant proportion is sourced from splendid Barossa sites. At the heart of the Penfolds philosophy lies a value that ultimately it is the quality of fruit and approachability of the final wine which are paramount. After completing primary and secondary ferments, Koonunga Hill is matured in a selection of fine American and French oak barrels. Dense red with purple hues. Dark fruit aromas of cherries and plum with a fresh red berry lift. Medium bodied, tasting of blueberries and spice, pepper and hints of liquorice contribute complexity, rhubarb and black olive notes add savouryness. A rich, ripe and generous wine, the tannins are soft and fine, integrating beautifully with the balanced background of spicy oak.

Max Schubert did more for the development of Australian Cabernet Sauvignon than any other winemaker. He was originally focused on Cabernet as the varietal of choice during his trials with the nascent vintages of Grange. The extensive expanse of Penfold vineyard resources have now been trained to yield parcels of the highest quality Cabernet Sauvignon, regardless of vintage conditions. Max is treated to a temperature controlled vinification on skins to develop the tannin profile, add structure and achieve balance while retaining fresh varietal characteristics. Upon completion of ferments, Max is filled to a selection of seasoned and new French oak barrels for a year's maturation.
 
Dark magenta red core. Ripe currant bouquets, cranberry and dried Italian herb nose, lifted red cherries and ribena, blackcurrants and mint. A palate of great Cabernet line and defined length, red, blue and black fruits over a length of fine silky tannins, savouryness to the finish, vanilla Chai and sweetly spiced cinnamon, cedar oak.
