William Lyne arrived in Van Diemen's Land on October of 1826. His descendants established Spring Vale in 1875 and have pursued farming ventures in this beautiful area of Tasmania's east coast ever since. Rodney and Lyn Lyne planted 6.6 hectares of vine at Spring Vale, principally Pinot Noir in 1986. Further plantings were made in the following years, more Pinot Noir and more Pinot Noir again, with a splash of Pinot Meunier for variety. Today, Spring Vale can lay claim to the most coveted editions of Van Diemen's Land Pinot Noir.

There are no corners cut in the vineyard management and winemaking at Spring Vale. The final cut of Pinot Noir is made up of approximately twenty individual components, all of which represent different clones, different vineyard blocks, different rows on various parts of the blocks, a choice of yeasts, varying fermentation temperatures and a number selections of oak. Grapes are destemmed into open pots for a few days of cold soak, inoculated with yeasts RC212 and treated to a regular plunge throughout the vinification to gently extract tannins. Upon completion to dryness, batches are pressed to a high proportion of new French oak barriques for nine months maturation.
 
Medium cherry colour. Aromatic nose of lavender and allspice, dried herbs and subtle toasty oak. Seamless, rich, dark cherry flavour on a sweet middle palate, a fine line running from front to back. Abundance of fine and even, powdery tannins before a long, balanced finish. An elegant style with deceptively easy to appreciate complexity.

Spring Vale Melrose Pinot Noir

Sourced almost entirely off an exciting new vineyard on Tasmania's beatified east coast, a small parcel of wild fermented Pinot Meunier is included for elegance and complexity. Eight different clones are individually husbanded to provide a cornucoppia of flavour and tannin profiles. Melrose has been fashioned to a lighter styling, similar to a well structured Beaujolais Grand Cru, with delicacy and sweet fruit being the key features. An engaging Pinot wine exuding freshly picked strawberry and raspberry fragrances, enhanced by a subtle treatment of fine French oak.

The Lynne family were amongst the first settlers in Van Diemen's Land. Almost two centuries later, Rodney and Lyn Lyne planted vines on a property called Melrose with the intention of producing world class Pinot Noir. Parcels are inoculated as berries are dispersed through the crusher destemmer, for rapid onset, minimizing skin contacts and avoiding excessive tannin extraction for a lighter style of Pinot Noir. Lactic acid bacteria strains thrive in the warm ferments, enabling early completion of malolactic and softer mouthfeel. Batches are drained after a week and the skins lightly pressed, assembled and racked, sulphured, lightly fined and crossflow filtered.
 
Medium garnet colour. The nose is packed with red berries and confectionery, an earthy undertone with hints of mushroom and funk due to Pinot Meunier. A juicy, soft, silky palate seals the deal in this early drinking, delicately structured, light to medium bodied Pinot Noir with a plump, juicy middle palate and soft, lingering finish, bright, uncomplicated and delightfully youthful.

Deep scarlet. A fresh, lifted nose of dark berries and festive pudding notes, summer preserves, cocoa and allspice. Blackwell is sourced exclusively from sloped vineyards around the north and west of Barossa Valley, precincts which yield small harvests of exceptionally concentrated Shiraz grapes. The focus is on preserving freshness and purity of these extraordinarily intense, dark fruit expressions, while retaining perfect tannin balance in the finished wine. The northern hamlets of Kalimna and Ebenezer contribute juicy dark fruit and rich mocha flavours, while parcels from western districts such as Seppeltsfield give Blackwell it's muscular, brooding structure.

Established 1944 at the very heart of Barossa Valley, the St Hallett wineworks, one of the region's most formidable labels, attracts fruit from the most distinguished growers in the ancient winegrowing hamlets of Kalimna and Ebenezer, Krondorf and Gomersal, Seppeltsfield and Marananga. Shiraz is picked at full ripeness to capture concentration of flavour, vibrant tannin structure and a dense, inky colour. Each parcel is individually crushed and vinified in a collection of old, traditional open fermenters. Upon completion, batches are matched to one of a selection of American oak barrels for two years maturation, gaining considerable texture and power prior to release.

St Hallett are an auspicious commune of ancient Barossa grower families and leading, accomplished winemakers. Established by the Lindner family during the closing days of the second world war, industrious pastoralists who would fill a horse drawn cart with daily cuts of meat for the local markets. Sourced from a coterie of superior Barossa vineyards, the Butcher's opaque purple hues hint at the generosity within, a solid and tightly structured wine, much adored for its distinctive mint and blueberry aromaticness.

Shiraz is sourced from some of the finest Barossa vineyards, sited to superior appellations such as Lyndoch in the south, Koonunga to the north and Valley Eden towards the west. Grapes are harvested throughout the warmth of day, brought to the winery, crushed into fermenters and inoculated with neutral strains of yeast. Following a regime of several pumpovers daily, batches are lightly racked, retaining a measure of the fluffier lees which add weight, texture and savouryness. Following completion of malolactic, components are assembled and treated to extended maturation in a selection of seasoned and new French and American oak barrels.

An inspiring varietal mix of Shiraz and Grenache with Touriga Nacional, the traditional vintage port grape. Shiraz primarily from elevated well drained vineyard sites around the cooler southern and central sections of the Barossa. The Grenache from low vielding west and north western areas of Gomersal and Greenock where the vines truly struggle to survive, producing intensely flavoured low yielding crops. St Hallett have carried out extensive trial work to find yeast strains that suit this wine. The aim is to highlight the fresh berry, floral, spicy, earthy aromas contributed by the Grenache and Touriga, while the richness and pepper spice of the Shiraz builds palate weight and structure. Contact with yeast lees post ferment, gives the wine an appealing texture and earthiness, completely fruit driven.

The refinement and sophistication of Eden Valley Shiraz are duly matched by the labour of love in nurturing vines on such difficult terroirs. Fruit is delivered to the winery, immediately crushed into fermenters and inoculated with neutral yeasts. Each block of Shiraz is separately vinified on skins for eight to ten days. A regimen of daily pumpovers, allowing the colour, flavour and tannins to be gently extracted from skins, contribute to the overall complexity of the finished wine. Upon completion of primary ferments, batches are drained, pressed and seeded with bacteria for malolactic. Components of are sent to mature several months in a selection of seasoned French and American oak barrels before the final assemblage.
 
Vibrant plum red with purple hues. A fresh and lifted nose of dark cherry, plum and acai berry complimented by a subtle secondary aroma of spice. Flavours of dark cherries and red fruit flow across the mouth with dark blueberry fruit and white pepper. The style is all about elegance and generosity of flavours over chocolate and blackberry framework, a seamless expression of poised new world Shiraz.
St Hallett Old Block Shiraz

A national flagship wine, articulating the concordance between the Barossa and Eden Valleys, derived from low yielding vines up to a hundred years of age. The meticulous nurture and respect for these Old Vines demands that parcels are culled throughout the winemaking, from pruning in the vineyard until the final stage of sampling the ageing stocks, to determine the best barrels. Old sites in the warm nether parts of the Barossa establish the rich foundation, whilst higher, cooler aspects of the Eden Valley contribute lifted aromatics and seamless tannins.

Each parcel is crushed into a fermenter and inoculated by select cultures. Each batch is vinified separately at controlled temperatures of 20C to 24C. Ferments are managed with pumpovers and drain returns to aerate as much as possible during the early stages, enhancing colour, flavour and tannin extraction. Parcels are pressed off skins into oak before beeing seeded with malolactic, a bacterial culture which converts natural malic acid to lactic acid, softening and stabilising the wine microbiologically. Each parcel is then assigned the most appropriate selection of seasoned and new, ancient French oak forest barrels. After twenty months maturation, the aged stocks are sampled to determine the final assemblage.
 
Deep crimson red. Powerful lifted aromas of mocha and dark chocolates, intertwined with soft, underlying dark berry fragrances. The palate oozes classic Old Block fruit, swirling the wine in the glass gives that sense of comfort as the enormous brooding complexity edifies. Rich dark fruits, blackcurrant and boysenberry with smooth chocolate textures, sensual tannins and a persistence of flavour. Decant for two to three hours before serving alongside venison or game.
