Shiraz is a varietal with which Taltarni has excelled from the very start, no real mystery as it's grown to some of Victoria's best purpose built vineyards. By applying traditional winemaking with modern Australian viticulture, secure the pick of Heathcote's harvest to create an amazingly complex, profoundly flavoured and seriously structured wine. Just perfect with steak or old world style meat Ragu, its vibrant assortment of juicy, cool ripened plum and spiced fruit flavours, are framed by a length of supportive, amicable tannins and supple, integrated oak.

Heathcote is an outstanding winegrowing region recognized internationally for world class Shiraz. Warm days and cool nights mean Taltarni's vineyards enjoy a rare confluence of climatic conditions which enable production of robust reds, most notably the Shiraz. Grapes are gently crushed to extract a measure of fresh flavours while releasing softer tannins, a component of whole bunches are included for complexity, musts are treated to a term of cold soak for optimal extraction of colour and tannin. Fruit is vinified for a week or more on skins to a small batch style in traditional open top fermenters, followed by completion of malolactic and a year or more in a selection of French and American oak.
 
Deep plum red hue. Luscious bramble, plum and white pepper fragrances are complimented by spices and mocha oak notes. The palate is well structured, layered with soft plummy fruit flavours, raspberry and a hint of toasty cigar box from the oak, seasoned by cool climate spice. A truly varietal Shiraz wine supported by fine tannins and brimming with the fine complexity for which Taltarni are renowned.

Taltarni's great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees, producing wines hallmarked by eloquent regional charm. Crafted exclusively from harvests of estate grown fruit, picked off a canon of western districts sites, where the vines are old and ruddy, precious and parched. Bunches are destemmed into small open top fermenters for eight days vinification. Upon completion, batches are treated to a traditional basket pressing into a selection of seasoned and new French oak barriques for malolactic and eighteen months maturation.

Identifying the right proportions for each wine and assembling the finest parcels are a labour of love for the Taltarni team. The final wine represents flawless balance and impeccable structure while delivering the requisite voluptuousness, richness and full bodied profile that is distinctly Pyrenees. Grapes are harvested to optimal flavour development and balance of ripe tannins. Batches are kept separate, destemmed and crushed to fermenters for vinification on skins over the course of two or three weeks, followed by an old fashioned basket press into a high proportion of new French oak barriques. After completion of malolactic, components are assembled and returned to barrel for eighteen months.
 
Deep brick red colour, darkened robes. Intense blackcurrant bouquets and distinctive Pyrenees mint notes, integrated toasty, mocha and cigar box of oak. A superb balance of fruit freshness, blackberries and spiced plum, cocoa and carob notes over a length of firm but silky tannins which are recognizably Taltarn. A beautifully structured and proportioned wine to accompany grand cuisine.

Tamar Ridge Kayena Pinot Noir

Kayena Vineyard makes a big, generous style of Pinot Noir, unique for it's power and weight to match game recipes as strong as heavily sauced garlic and rosemary lamb. A good balance of ripe fruit, tannin astringency and cleansing acids persist, thoroughly enjoyable right now. The aim has been to achieve an elegant and complex expression of terroir, a blend of several clones is called upon to weave a fine, textural style. Maturation in French oak barriques is showing through with subtle spiciness and just a little extra grip on the palate without dominating.

Exclusively Pinot Noir from the prestigious Kayena Vineyard on West Tamar. A range of clones, including MV6, Pommard and 114, are assembled for complexity. A harvest of excellent condition with good ripeness and vivacious varietal fruit characters is delivered to the winery in pristine condition. Grapes are destemmed and left to cold soak for several days. Vinification takes place in open fermenters whilst being regularly pumped. Once dry, the ferment is passed through a basket press to barrel, a proportion is treated to post ferment maceration. Malolactic is followed by twelve months maturation in a combination of new and seasoned French oak barriques.
 
Bright fleshy plum colour. Spicy cigar box bouquet, dark fruits over a subtle undertone of smoky oak. The palate is nicely firm with poised acid/tannin combination and sufficient fruit sweetness to keep it balanced. Kayena Vineyard offers firm structure and a full body that loves to evolve, a generously flavoured style of Pinot Noir that's the classic food match alongside roast duckling or pork sausage cassoulet.

Bright cherry hues. Herbal florals bouquet, olives and black currant, nettles and stalk. A voluptuous, weighty palate of sweet fruit intensities, well structured, red cherry and plum fruits roll through the velvet textures, just a little alcohol warmth and depth from the extended macerations, length, linearity and juicily drying tannin finish.

Brian Croser established vines on a foggy, north facing slope of sandy clay loams at Parawa, very near the extreme south westerly point of Fleurieu Peninsula in 2003. The chilly maritime climes on Maylands Farm are a challenge for the vineyard team but they yield Pinot Noir of extraordinary eloquence and exquisite pastoral richness. A week of hand plunging and warmer ferments are gently air bag pressed into a high proportion of new French oak barriques for ten months maturation. Its voluminous palate unravels layers of complexity before an august, satin finish.

Tapanappa Whalebone Vineyard Cabernet Shiraz

Tapanappa acquired and renovated the precious Whalebone Vineyard at Wrattonbully in 2002. The thirty year old Shiraz and Cabernet vines have responded magnificently. The paradox is that despite being cooler than Coonawarra, the fruit ripens earlier and more completely. The still air, cool night and warm days particularly suit the rejuvenated vines. The quality of fruit is ideal for a masculine Medoc style, not surprising given the similarity of soil, geology and climate to that of St. Emilion in Bordeaux. By maestro Brian Croser, only a few hundred cases are made.

The precious grapes are hand picked and vinified in separate batches. Grapes are de-stemmed, partially roller crushed and chilled to 2C in one tonnes fermentation tubs. A four day cold maceration precedes fermentation by native yeasts and bacterial strains, hand plunged twice daily to break up the cap of skins. At the peak of vinification, temperatures reach 34C before fermenting to dryness. The wine and skins are sealed down for a further week of maceration before draining and gently pressing into French oak barriques. Upon completion of malolactic, batches are sulphured and racked several times over a period of fifteen months maturation, to be bottled unfiltered after a light egg white fining.
 
Dark garnet/ ruby colour. Intense black currant, dusty herb and spice edge of Cabernet, the anise and blackberry of Shiraz. Intense but refined flavours, the freshness and vibrancy of Cabernet accentuated by the smoky and minty hallmarks of Whalebone terroir. Significant tannin structure before an even, mouth coating savoury finish. To accompany spring lamb or rare pigeon breast with fines herbes.
