Deep ruby garnet hues. The nose presents as classical Pinot Noir, red and dark fruits of strawberry, cherries and plum, leather and earthy notes, spices and tar. Generous plum and strawberry flavours, a well balanced structure of acidity and great length. A late bloomer, released after the 2014, vintage 2011 was a firm beast, dominated by strong tannin structure, it needed time to settle before unlocking from the Moss Wood cellars.
Moss Wood Ribbon Vale Cabernet Sauvignon
Margaret River
Available in cases of 6
A key to the success of Ribbon Vale is an astute understanding of how tannins develop through skin contact and fermentation. Through tasting, the right balance between fruit, tannin and the correct time to press is struck. Merlot is a contrary beast, the goldilocks of grapes and the porridge has to be just right. The inclusion of Cabernet Franc fulfills a long time ambition to, fashion Ribbon Vale in the style of the great right bank wines of Bordeaux. Delicious drinking now, for those who prefer the plump young flavours of Medoc in its youth.

Fruit is hand picked and de stemmed into small, open fermenters. Inoculated to a pure yeast culture and vinified at controlled temperatures peaking at 28C. Each batch is hand plunged thrice daily over the course of a fortnight, regularly tasted to ensure good extraction of flavour and tannin. As fermentation progresses, the treatment of varietal components begins to vary, batches are pressed at varying stages of completion, drained and treated to malolactic. Parcels are filled to a combination of seasoned and new 225 litre French oak barriques, racked and assembled in late summer, followed by an extended term of maturation and unfined bottling.

Deep brick red hue. Concentrated Cabernet fruit aromas of red currant, leather and cedar, complemented by fragrant notes of violets and rose. The Merlot adds mulberry and dark fruit, oak age adds complexity, charry and tarry characters. Generous red and dark fruit flavours give the wine a rich mid palate and good length. Smooth texture, displaying the exceptional balance which is the hallmark of Ribbon Vale.

Mt Camel's vineyard is blessed by idyllic terrain and growing seasons. The grapes ripen evenly and in beautiful condition, a wholistically managed vineyard, there is never any adjustment of pH. All vines are cane pruned, the number of buds are kept to what is deemed appropriate for each, with low yields of exceptional fruit being the aim, a single tonne per acre. Mount Camel Ridge is a dryland vineyard and drippers have never been installed. The grapes are hand picked, fermented naturally in 500kg open vats, hand plunged, basket pressed and matured under a selection of seasoned and new French oak. Mt Camel is racked two to three times during fifteen to twenty months of maturation, lightly fined but unfiltered.

Dark red colour. Fresh blueberry, blackberry and plum preserve aromas offer impressive precision before a slow mounting degree of aromatic spiciness before a solid, generously flavoured palate. Orange blossom and white pepper flavours, characters of chocolate and dark plum combine into a powerful yet beautifully balanced wine with a touch of sweetness, culminating in a clean dry finish, clean pomegranate acids and finely grained tannins. A Shiraz of beauty, individuality and finesse that reflects the terroir, grape variety and climes from which it came.

The Grampians are notorious for drought conditions which take a very firm grip on the vines, giving them a shakedown of any water they might have and concentrating the flavours. Many of the vines are grown to higher altitudes, cold air tumbles down the mountains and chills the fruit throughout the ripening. Harvests of Shiraz exhibiting strong spice and pepper characters are set aside for Billi Billi. Grapes are treated to a cold soak on skins for a fortnight, inoculated to yeast strains Maurivin B and 796 for eight days vinification in traditional open top fermenters, hand plunged and transferred to a selection of new and seasoned French and American oak barriques for a year's maturation. Alcohol 14.2%
