Much of the viticulture here is for local consumption, honest table reds for enthusiasts who know their wine and enjoy matching it with good country faire. Villacampa make a mostly Tempranillo wine with a measure of Cabernet Sauvignon, hand picked off vines up to thirty five years of age, grown to well drained limestone soils. Fruit is treated to a combination of modern and old world vinification techniques, before filling to a selection of seasoned French oak casks for six months maturation.

Deep cherry red colour with hues of Tempranillo blue. Bright fresh currant and strawberry nose, sage, spices and red fruit notes over the darker berry characters of Cabernet. More strawberry and currants on the succulent palate, a juicy, mouth watering wine of opulent fruit flavours and background acidity, supported by fine, drying tannins.

The ultimate quality of wine is the goal at De Bortoli but sustainable environmental management is non negotiable, clean soils and a holistic old world approach, really do make great Sangiovese. Always the visionaries, they established a block of Sangiovese with cuttings transplanted from the illustrious Brunello vineyards of Tuscany. Sangiovese likes the warmth and vines were sown to a north south axis for optimal exposure to the sun. Shiraz offers a myriad of interpretations, Heathcote grows its own unique style, renowned throughout the world of wine for its magnificent structure, substantive tannins and weight of fruit. Parcels for a gentler Heathcote style are sourced by the De Bortoli team from vines grown to rich, red volcanic soils. Bunches are destemmed and crushed, fermented for a fortnight on skins, pressed and racked for a term of age. A forward drinking style of ripe dark fruit bouquets, spiceyness, blackberries and plum over a length of gentle tannins and supple cedar oak.

Roundstone vineyard is a beautiful north facing vineyard at Steels Creek, established 1998 on the western slopes of Yarra Valley. Gamay is the great grape of Beaujolais, a lightly structured wine of virile perfumes that's delicious while young. A balance of whole bunch and destemmed fruit is treated to a course of plunging and pumpovers followed by eight months maturation in seasoned 500 litres oak butts. Established 1968 by the legendary Melbourne restaurateur Tom Lazar, Virgin Hills is the gem of the Macedon Ranges, one of Australia's iconic vineyards. He planted Cabernet Sauvignon and Shiraz, Malbec, Merlot and Pinot Noir, with a view to creating an Australian first growth to rival the great Bordeaux he had grown to love while working as a sculptor in Paris. Only one wine is bottled under the Virgin Hills label each year. From inaugural release, the cepage of varietals has varied subtly each vintage, adding to the mystique and complexity of Virgin Hills.

The site has always delivered low yields of half to 1½ tonnes per acre, due to the tough climactic conditions and dry grown grapes. To this day, it bears the viticultural classification of marginal vineyard. After spending a vintage in the Coonawarra with Owen Redman, Tommy Lazar produced the first Virgin Hills vintage. A blend of all his varieties, it stood out among Australian wines as being uncharacteristically subtle. Cabernet Sauvignon and Shiraz, Merlot and Malbec grapes are picked off vines over forty years of age, to be vinified and aged in a selection of exclusively French oak barrels.

Bunches are de stemmed to retain as many whole berries as possible. Parcels are separately vinified in open and upright fermenters over the course of a fortnight at temperatures below 25C, while treated to a course of gentle pumpovers and plunging. Upon completion, some batches are held on skins for a term of optimal extractions. Components are pressed into a high proportion of new French oak barrels for twenty months maturation, periodically rack and returned for clarification before assemblage.

Parcels of Merlot and Cabernet are de-stemmed but remain uncrushed, to preserve whole berries, into a mix of open and static fermenters. Gentle hand plunging and pumpovers were employed up to three times a day throughout a fortnight's vinification at temperatures under 25ËšC. Upon completion, batches are pressed off skins into a selection of seasoned and new French and American oak barrels for a year's maturation.

Dark crimson red. Lifted bouquet of cassis and mulberries, dusty briar notes, hints of cedar and vanillin from the fine grained oak.
