The Fox Creek vineyards were established from the ground up to be the most environmentally friendly, whilst the vines themselves are spoiled with attention. Dr Jim Watts writes the recipe for a whole that's greater than the sum of parts, Merlot for elegance and plummy fruit, the silk of Cabernet tannins, aromaticness of Cabernet Franc, Petit Verdot for titillating spice and dazzling blueberry fruit.

The superlative quality of Fox Creek begins with an exacting pruning of vines to achieve smaller yields of the most intense fruit. Batches are open fermented for a week and a half on skins before pressing off. The Cabernet component is vinified in a selection of prior use French and American oak barrels, Merlot, Petit Verdot and Cabernet Franc are treated to the finest seasoned French. Alcohol 14.5%

Deep purple red. Fresh leafy and minty lift, hints of perfume, chocolates and cigar box, blueberries and blackcurrant, nutmegs and clove. Raspberries, black cherry and blackberry, coffee and mocha, hints of toast, brown spices and roasted nuts, Jim's fine silky tannins cosset the palate, delivering focus, flattering style and splendid length.

James Stanley Malpas, born of Willunga, served with the 27th Infantry Battalion AIF during World War I in Gallipoli and France, decorated with the distinguished Military Cross, he returned to McLaren Vale and cleared the land known as Fox Creek. Three quarters old vine Shiraz, a fifth of Cabernet and soupçon of Franc, JSM makes a wine of complexity, substance and panache, it's all luscious fruit, framed by long textural Cabernet tannins, fully integrated and balanced by the patience of nineteen months in the pick of well seasoned oak.

$2899each $347DOZEN EACH DOZEN Mostly Grenache, a third of Shiraz, the balance of Mourverdre. Grapes are grown to a trellis system called Scott-henry and the vines are trained to two cordons. Selective hand pruning yields a harvest of small, concentrated berries full of colour and flavour. The precious parcels of distinguished, sixty to eighty years old McLaren Vale vines are treated to an old fashioned maceration and vinification in traditional open fermenters, followed by a press and fill to a selection of seasoned French and American oak puncheons, purposely chosen for the task on the basis of spicey oaken characters and sweet tannin profiles.

Bright cherry red. Perfumed confectionary lift of raspberry and cerise, mulberries and hints of musk, ginger nut biscuits, cinnamon, nutmegs and clove. An expansive berry palate, hints of chocolate éclair, well integrated oak, focussed and elegant tannins before a silky persistent finish. The red wine of choice to match with venison pie and gourmet bangers.

The Baron is back, gladly exchanging his bright red triplane for a bottle or two of good red wine. This suave Shiraz is crafted from some of the best Fox Creek estate grown fruit, much in the same way as the eponymous flying ace took out his pick of prey in the skies over France. $2099each $251DOZEN EACH DOZEN Fox Creek's vineyards are hand pruned to control vigor, maintaining cropping levels quite low to yield small berries full of concentrated flavour and colour. Native flora and fauna are encouraged as they are excellent pest control and deter parasites. The winemakers sample the grapes regularly to determine optimum picking time as judged by flavour development and baume. Grapes are delivered promptly to the winery. Each batch is open fermented for seven to eight days on skins with low intensity pumpovers conducted to preserve primary fruit flavours. The wine is pressed off to finish fermentation and maturation, mostly in a selection of older French and American oak barrels.

Vibrant purple. Intense aromas of mulberry, blackberries, plum and cherries, interwoven with nutmeg, cinnamon and clove. Fresh juicy red berries, plums and black cherries lead into a vanilla custard mid palate with hints of toast, coffee and mocha. The youthful tannins complete the experience with an injection of fresh toasty oak on the finish. The perfect accompaniment to richly sauced meats.

Fox Creek Reserve is assembled from a ruthless barrel cull of the best parcels to come out of each vintage. Offering great weight of fruit on the palate, an extraordinary range of flavours, the finish is long and legendary. Highly cellarable yet fully approachable when young, a Shiraz of great purity and unequivocally fine acidity, decanting and breathing are a must.

$8699each $1043DOZEN EACH DOZEN Shiraz is sourced from the choicest blocks of McLaren Vale vineyards endowed with a range of terroir contributing structural and flavour complexity. Soils include bay of biscay, grey loam, and red gravels. Grapes are harvested when fruit flavours, tannins and acids are in perfect harmony. Vinified on skins for eight to ten days, all components complete ferments in barrel, developing texture while integrating oak and tannins. Matured twenty one months in a combination of specialized oaks by a range of French, American and Australian coopers. Barrel by barrel selection throughout all stages of fermentation and maturation ensures that only the outstanding parcels are included in the final wine.

Intense dark garnet colour. Red cherries, plums and a hint of herbaceous spearmint lift, meld with the complex aromas of cinnamon, nutmeg and roasted chestnuts. The palate is rich and full showing lashings of plums and cherries, with earthy nutty notes rounding out the mid palate. Power, richness and complexity, the structure is thick and rich, characterised by vibrant textural tannins which soften as the wine evolves, it finishes lingering and long.

Short Row is crafted from harvests of intensely flavoured Shiraz grapes, sourced off the best McLaren Vale blocks and from Fox Creek 's own short rows of vine, adjacent to the estate cellars. Short Row boasts an illustrious history of wine show triumphs ever since inaugural release. Endowed with rich and powerful aromas, an amazing palate of blackberry fruit, toast and sweet red berries, all wrapped in velvety soft tannins, culminating with a long and dry, flavoursome finish. The classic McLaren Vale style, it responds well to a course of decanting.

$3799each $455DOZEN EACH DOZEN The vines on Short Row block are planted for optimal light exposure, translating into yields of the most flavoursome Shiraz grapes. Fruit is vinified on skins for seven to ten days in open fermenters prior to pressing, the majority is treated to a spell of oak barrel fermentation. Parcels are matured in varying proportions of new and one year old French and American oak barrels for eighteen months. Components are selected for inclusion based on fruit intensity and richness, structure and refined integration of oak. While made to drink well upon release, like all good wine, Short Row rewards the enthusiast who will take the time to decant and set aside for breathing.

Deep purple/ crimson hue. Ethereal perfume of nutmeg and musk, cinnamon and vanilla, intertwined with aromas of plum and raspberries, strawberries and red cherry, all sitting on a layer of dusty, smoky toast. Rich fruit driven front and mid palate crammed full of cherries and plum, strawberries and cream. This ball of richness is a hallmark of the style, youthful grape tannins provide a gritty texture and length that will continue to soften and integrate.

An accord of three very different parcels of superior McLaren Vale vineyard, vinified on skins for a week and a half in traditional open vats, followed by transfer to a selection of seasoned and new French oak barrels for completion of malolactic and eighteen months maturation. The individual Blocks of Cabernet were cannily shifted between different cooperages of oak to impart layers of flavour and enhance structure, the final assemblage is a judicious draught of vineyard parcels to achieve layers of flavour and opulent tannin profile.

Fleshy blackcurrant, black cherry and mulberry flavours lead into a blueberry muffin and milk chocolate mid palate.
