Penfolds Max Shiraz Cabernet
Available in cartons of six
One of the world's most recognized marques, Penfolds define the classic Aussie accord of Cabernet and Shiraz, a genre unto itself, into an approachable, freshly flavoured, early drinking style. Dr Penfold held a firm belief in the medicinal value of wine and obtained cuttings from the south of France, replanting them around his homestead in Adelaide Hills. Max Schubert called on the fruit of these ancient cuttings in the 1940s as he began his trials in formulating the mighty Grange. He now lends his name to a splendid construct of sound structure and succulence of fruit.

Dark cherry red. Complex, leafy with olive fruit and dried oregano, beetroot and roasted Mediterranean vegetables, an array of ripe summer berries and dark spice with just a touch of subtle oak lurking in the background. Penfolds RWT Shiraz
Barossa
Available in cases of 6
Outstanding Langtons Classification. The Red Winemaking Trial presents an alternative to the multi-regional, American oak style of Shiraz which are the hallmarks of Grange, expressing instead, a pure Barossa wine aged exclusively in French barriques. RWT is vinified from fruit primarily selected for its aromatic qualities and fine texture rather than sheer intensity or power of flavour. In contrast to the muscular and assertive Grange, it's style is opulent and fleshy, a wine which redefines Barossa Shiraz at the very highest level.

Red Wine Trial is no longer on probation and will complete the conversion of many. A resplendent accord of pure Barossa Shiraz, French oak and the eminent Penfold style. Parcels of fruit, sourced from mature, twenty to hundred year old vineyards in the northern precincts of Barossa Valley, where the higher clay contents retain moisture and slowly release it to the vines, achieve a remarkable quality of Shiraz with darker, richer fruit profile. Grapes are small, thick skinned and intense, with balanced acidity and even tannin ripeness. An elegant, physiologically ripe Barossa Shiraz of outstanding quality and depth, matured sixteen months in an extremely high proportion of new French oak hogsheads.

Black core, magenta rim. Broods upon opening, yet soon to reveal a living aromaticness, sweet, saturated festive pudding, quince paste with glacéed cherries, dark cocoa and Arabica bean, jammon and ground pistachio nut and licorice root, bruléed creaminess of oak. The rich, dark tannins of northern Barossa, impressions of dark roasted meats, oxtail, slow-cooked beef cheek and marrow, texture and viscosity. Dark chocolate nougat and nuts, soy and charcoal fill the gaps.
Penfolds St Henri

Aged in a collection of very old and evolved 1460 litres oak vats, the raw St Henri flourishes into a complex fruit forward wine with supple tannins and a whisper of oak, Australian Shiraz unlike any other.

A direct descendant of two great winemaking dynasties, the Penfolds and the Tolleys, Kym continues to employ the best of traditional and modern winemaking techniques. Kym trains his Coonawarra Shiraz blocks, to yield vibrant red wines with plenty of flavour, suited for early drinking while possessing the substance to age gracefully. The objective with Atlas is to create a youthful, rich and mellow wine of gentle tannins and supple oak, fashioned to articulate the excellence of Coonawarra Shiraz and offer plenty of flavour. Fruit is treated to an open vinification in traditional heading down fermenters and matured in a mix of seasoned and new French oak barrels for eighteen months.

The history of Penley dates back to 1858 when The Phoenix Winemaking and Distilling Company was established at Stepney. During 1888 the company name was changed to Tolley Scott Tolley and remained with the family until 1960. Tolley's great grandson Kym re established T.S.Tolley as Penley in 1988. Phoenix is a reference to the re emergence of Tolley winemaking traditions and enduring Coonawarra vineyards. The value and quality of Coonawarra was first recognised by D. A. Tolley who was a purveyor of oak barrels and winemaking gear in 1908, where he gained access to the wines of Coonawarra. To quote from early Tolley records, Coonawarra wines were distinctly different, dark purple in colour, they exuded a lovely perfume whilst fermenting. Nothing has changed. Phoenix is an early drinking Coonawarra Cabernet treated to an open fermentation in traditional heading down vessels, followed by a regimen of barrel ferments to achieve balance and integration. The completed wine are treated to an extended maturation in a selection of new and prior use French oak barriques.

Bright crimson with dark purple hues. Fragrant aromas of violet, black currant leaf, ripe wild berry and varietal Cabernet spice over complex, well integrated oak fragrances. Mulberry and blackberry dominate the tight palate, enhanced by silky grape tannin and elegant complex cedar oak. A very generous middle palate scented with hints of liquorice and chocolate linger long on the finish, made to enjoy in its youth.

Careful ageing in oak are the final touches to enhance the quality of fruit. Cabernet Sauvignon off fully mature vines yielding a mere 2 t/A are treated to a temperature controlled, open vinification in headed down fermenters, followed by a lavish twenty months maturation in exclusively new, mostly Troncais French oak barriques.
