John Catto left his native Scotland for the new colony of Australia to seek his fortune in 1833. He settled near what would become Bendigo, calling his new home Memsie, after the village whence he came. Catto chose his ground carefully and established vines upon a site of rich clay soils, fortuitously scattered with the perfect measure of limestone. The splendid terroirs which now yield harvests of articulate Bendigo Shiraz, produce a delicious, full flavoured red wine that's perfect for serving alongside your favourite mix of grilled meat and veg.

All plantings are irrigated by the nearby Loddon river with ground level mini sprays. Red wine grapes are planted on heavy clay soil interspersed by pieces of limestone. Shiraz is harvested and crushed into fermenters, the caps are plunged and pumped over thrice daily for optimal extraction. After passing through a membrane press and completion of malolactic, a percentage of the wine is treated to micro oxygenation, the balance is transferred to a selection of American oak hogsheads for a term of maturation and the final assemblage.

The Cumming family have farmed in the Bendigo region for fifty years. Ron and Peter have a strong background in horticulture and place a strong emphasis on vineyard management. The emphasis is on producing high quality, fruit driven wines with strong varietal definition and a generous palate. Three new vineyards have been planted at Bridgewater -On- Loddon to enhance complexity and improve overall quality. A conspicuous performer, Water Wheel is one of Bendigo's most highly decorated and internationally renowned winemaking estates.

Vines are hedged trellised, exposing grapes to the sun achieving maximum ripeness. All blocks are irrigated from the nearby Loddon River through the use of ground level mini sprays. Fruit is harvested to a timetable determined by full physiological ripeness. Parcels are delivered to the winery in pristine condition, crushed and inoculated to select yeasts followed by a temperature controlled vinification in tank. Fermented at 12C to 15C over the course of several days, batches are cold stablilized and earth filtered followed by the final assemblage and sterile filtration to bottle.

A bright green straw colour. Water Wheel exhibits grass, lime and lemon citrus overtones on the nose, vegetable characters, asparagus, green bean and kiwi are in the background. The palate shows strong citrus flavours with some mineral characters in the middle, good fruit and acid balance. The wine has a clean, crisp and persistent finish, the ideal aperitif, well suited to seafood, risotto and lighter summer dining.

$3699each $443DOZEN EACH DOZEN Willow Creek are a small but dedicated winemaking estate of a mere dozen hectares spread out across three slopes of undulating hills at Merricks North, in the renowned cool ripening climes of Mornington. Perfect ripening conditions encourage the retention of aromatics in the fruit while developing good natural sugars. Vines are planted to grey unirrigated loam soils on an east facing slopes just opposite the winery and cellar. Grapes are harvested by hand and treated to a whole bunch press to retain pristine fruit characters and minimise phenolic extraction. Juices are cold settled before a transfer to a combination of new and seasoned French oak barrels for fermentation and eleven months maturation.

Pale straw with green hues. Intense lemon aromas are framed by a complex almond, mineral and subtle oak bouquet. The palate reflects the nose with persistent citrus flavours, balanced by almond meal nuttiness and creamy texture from the lees ageing. Crisp natural acidity and a mineral length give the wine a tight structure which will continue to evolve and reward.

There were remnants of it's past life scattered all over the property indicating that over time it has served as an orchard, dairy and sheep farm. The Homestead Block was planted to Pinot Noir in the late 1980s. Grapes are harvested by hand, destemmed and crushed, vinified in small fermenters with gentle cap management to extract maximum colour and quality tannins from the skins and seeds. After a total of sixteen days on skins to build structure, the batches are pressed and transferred immediately to a combination of new and prior use French oak barrels for the completion of malolactic and eleven months maturation.

Medium garnet hue. Black cherry and chocolate with earthy/beetroot complexity and subtle French oak. Quite rich cherry fruit upfront, with more complex herb and earthy flavours and French oak flavours building on the length of the palate. The wine has a silky texture and good middle palate volume with very fine grained tannins giving grip to the finish.

Exclusively Mendoza clone Chardonnay, hand picked off the propitious vines at parcel 1 of the illustrious Block 6 at Yabby Lake's Tuerong vineyard on the Mornington Peninsula. Grapes are crushed and pressed along with the complete solids into a selection of seasoned and new, tightly grained 500 litre French oak puncheons, naturally vinified for three weeks through the action of wild indigenous yeasts, followed by eleven months maturation. An exotic array of applejack, citrus blossom, grapefruit pith, almond meal and flint aromas, a precise mineral intensity.

A blend of three splendid clones, P58 from Block 1, B76 from Block 4 and the Mendoza off Blocks 1 and 6, each planted to a specific regimen of aspects and soil, are exactingly crafted and assembled. A long term commitment to producing the finest Chardonnay has achieved the creation of a truly remarkable wine.

Vinification commences naturally through the action of wild indigenous yeasts and is complete in a little over a fortnight. Yabby Lake is matured eleven months on gross sedimentery lees without any malolactic treatments, before identifying the best barrels for assemblage into the finished wine.

Crop levels are carefully managed to produce the consumate Pinot Gris. Fruit is all hand picked, whole bunch pressed and wild yeast fermented, followed by a course of age on yeast lees to infuse textural palate richness.

Grapes are hand picked, hand sorted and destemmed into traditional open top oak fermenters, a fifth is included as whole bunches. Vinifications are hand plunged up to three times daily as temperatures peak at 32ºC, batches are pressed off skins after a fortnight of ferments into a selection of 500 litre French oak puncheons for completion of malolactic and eleven months maturation.

Great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance.
