Greg and Natala Flynn established their operation on the narrow strip of ancient red cambrian Heathcote soils which produce world class Shiraz wines. MC stands for multiple clones, when planting their vineyard, the Flynns sowed a number of different clones with the aim of increasing complexity in the wines. Endowed with a vigorously perfumed bouquet and graceful palate, MC Shiraz is an elegant and controlled Heathcote Shiraz with clear regional personality, treated to an extended ageing in a selection of oak barriques from the world's finest cooperages.

The Flynn Heathcote property enjoys an easterly facing aspect to catch the first morning sun, ideal for ripening grapes and reducing any risk of frost. Whilst planting the vines, a number of different Shiraz clones were grafted onto various rootstocks, the aim being to increase the complexity of wine. Vinified to traditional handling techniques, the hand picked grapes are crushed, fermented in small batches and hand plunged over a course of seven to ten days. Juices are basket pressed by hand, transferred to tank for settling followed by a racking to barrel. Flynn is aged fourteen months in a combination of new and prior use American and French oak barriques.
 
Dark cherry red colour with scarlet robes. Ripe cherry and mint perfume, integrated oak and a hint of pepper. Full bodied yet elegant palate, structured and generous with plum/ violet fruit characters, kept vital and bright by crisp and aromatic cherry acids, supported by soft, well rounded tannins and licorice chococolate oak before a fine, long, flavourful finish. A match with stone grilled beef or steaming teppanyaki.
Galli Estate Heathcote Block 2 Shiraz

Galli's Camelback vineyard, situated northeast of the Heathcote township, enjoys a warmer clime, and the rainfall is always very limited. Growing seasons are normally dry with relatively even temperature ranges during veraison. Shiraz wines from this vineyard are delightfully flavoursome with earthy notes and a finely structured palate of some elegance, distinctive varietal character and sturdy tannins.

In addition to the estate wineworks at Rockbank, the Galli family have established a 250 acre vineyard at Heathcote. Outstanding Shiraz growing conditions here due to the soils and climate, Galli Estate are well positioned to make some of Heathcote's very finest. Shiraz Clone PT23 was originally planted to grey clay soils in 2000. The vines are vertical shoot positioned, meticulously bunch thinned to maintain quality. The harvest occurs from mid-March through April to early May. Fermented in a range of open and closed vesicles, pressed at dryness and then transferred into oak. Maturation under a selection of fine oak barriques for approximately a year before bottling. Alcohol 14.6%
 
A deep reddish purple colour. Attractive black cherry fruit is accompanied by splashes of spice on the bouquet. Further aromas of red berries and warm, spicey clovey oak, ripe with satsuma plum and chocolate coffee/mocha impressions. Succulent layers of complex flavours. An exceptionally powerful and complex palate, sweet and savoury, gamey, roast meaty characters and liquorice. Galli Heathcote goes great with game, or a spicey beef dish.

Galli Estate produce a variety of quality wines from fruit grown on their vineyards at Sunbury and Heathcote. Galli Estate have been very well received by reviewers, and have been recognised for quality at competitions, already receiving Gold for their Pinot Grigio, a varietal that the winemaking team find very exciting. A milky white wine showing grapefruit, lime and green apple flavours with hints of musk and lemon. Sylish and modern for everyday enjoyment, Galli Estate is long and clean with titillating fruit and a refreshing finish.

Galli Estate is close to the city of Melbourne, and the vineyard is planted on a north-south axis. Vines are kept low yielding to ensure richly flavoured grapes, grown to red ironstone soils over basalt, they are spur-pruned and vertical shoot positioned to ensure fruit development with even ripening. Hand picked grapes are crushed and pressed, the exclusively free-run juices only are settled and then fermented at low temperatures. After a long fermentation in tank to retain freshness and intensity of fruit characters, the wine is cold-settled to clarify. After racking to remove yeast lees, the wine is stabilised, fined, filtered and bottled early to retain the qualities of the vivacious Pinot Grigio. Alcohol 13.0%
 
Pale in colour. Stone fruit and peach kernel aromas, fine bouquets of lime blossom and grapefruit with a touch of musk. Fine and full flavoured with balanced acidity, the palate exhibits exciting expressions of lime and lemon juice, cooking apples, and some floral notes. It finishes clean and fresh with a chalky, talc like astringency which makes it the perfect accompaniment to stronger flavoured fish, and other seafoods. Have it with traditional faire like mackerel and bay leaves.

Careful and meticulous winemaking practices and specialized viticulture are employed to ensure the highest quality cool climate wine. Central to the process is the method of canopy vine management which allows gentle morning sunlight and soft mountain breezes to delicately ripen fruit, producing vibrant colours and intense fruit flavours. Fruit is vinified in small batches through inoculation to choice Bordeaux yeasts and transferred to French oak for the completion of malolactic ferments. The best wines from individual barrels are selected according to intensity of colour, good varietal fruit definition and ripe, supple tannins. Components are racked and assembled into the finished wine.
 
Bright cherry colour with hues of garnet red. Plummy fruitcake nose, juicy cherry and licorice aromas underpinned with five spice and marzipan. Soft plummy ripe red fruit flavours to the palate, richly underpinned by sweet fruit and velvety soft tannins. The finish is weighty, warm and persistent. Enjoy with lasagna or stuffed oven baked eggplant.

Gapsted have taken the opportunity to acquire superior harvests, grown to the upper and middle reaches of Valley King, constructing a Cabernet Sauvignon of wonderful warmth, integrity and charm. A component of exquisite Barossa fruit contributes comforting chocolatey richness, a precious parcel from a choice site in Heathcote adds palate weight and splendid savouryness. A whole that's greater than the sum of parts, suede textural mouthfeel, generosity of fruit and sound structure, finishing in precisely the right direction.

Gapsted are owner operated by winemakers and growers who were raised on neighbouring farms. They know King Valley well and settled down with loved ones to plant vines. Cabernet Sauvignon is harvested at night from fine vineyards in Heathcote and Barossa Valley, to be assembled alongside a backbone of cool ripened fruit from the higher aspects of Valley King. Grapes are cold sealed prior to a warm ferment. Batches are pressed off skins after a term of maceration and racked to barrel for completion of malolactic. Components are treated to an extravagant two years maturation in a selection small French and American oak barriques, followed by a light fining for bottling.
 
Deep black red colour. Dark, ripe, brambleberry and forest floor aromas with hints of spicy cinnamon and earthy beetroot. A rich full flavoured palate brimming with cassis and blackcurrant fruit leading to a lucsious velvety mocha finish. Gapsted fills the whole mouth with fruit weight and finishes on well rounded tannins. Serve Gapsted with rosemary thyme lamb and roast vegetable.

Gapsted Ballerina Canopy Sauvignon Blanc

The high altitude, cool ripening Gapsted vineyard at Whitfield in Valley King, facing east at an elevation of 375 metres, is ideally suited to harvests of the finest Sauvignon Blanc. Protected from the hot afternoon sun by hills behind the property, the managed canopy delivers vintages which are fully endowed with an intensity of aromaticness and flavour. As is always the case with good fruit, the wine virtually makes itself. Revealing just a hint of fine tangy acidity, Gapsted is lively, wonderfully balanced and refreshingly crisp, all the way to the finish.

The earlier parts of summer in Victoria's highlands are cool and dry, contributing to the health of Gapsted's vines. Warm days develop ripe tropical fruit characters and the cool nights ensure crisp, grassy Sauvignon Blanc flavours. Conditions in the latter part of the growing season encourage ripeness, full development and fleshyness in the grapes. Sauvignon Blanc is harvested throughout the chill of night, grapes are gently air bag pressed and only the free run juices are retained. Racked to fermenters, crushed and settled to collect much of the flavour from skins, juices are inoculated with choice yeasts and treated to a slow, cool vinification aimed at preserving the vital fruit characters. Alcohol 11.2%
 
Pale straw with green hues. Fragrant nose of nectarine, lychees and lime. A refreshing, balanced palate of citrus and sweet, green tropical fruits, silky honeydew softness fills out the mid palate and adds lovely length. Full of intense cool climate Sauvignon Blanc fruit characters, an envigorating aperitif style and an excellent food wine to enjoy today alongside spring asparagus, shaved parmesan, a squeeze of lemon and virgin oil.

An assemblage of King Valley fruit, some parcels acquire their individuality in the vineyard, while others develop their charm in the vinification and ageing. Previous vintages have claimed conspicuous accolades including a silver medal at the prestigious London International. Much of the fruit is sourced from eminent sites around Whitfield in King Valley, not far from the Gapsted wineworks. Growing conditions can be close to perfect in these higher altitudes and the team make it a priority to capture and preserve the exceptional quality of Shiraz.

Central to Gapsted's viticulture is the ballerina method of canopy vine management which allows gentle morning sunlight and soft mountain breezes to delicately ripen grapes. Harvests are separated into three parcels and handled separately. Flavours and texture are enhanced through extended plunging and pumpovers. The first component is vinified to retain concentration and intensity before being filled to new French oak at the end of primary ferments. The balance is transferred to a selection of new and prior use French and American oak barrels after completion of malolactic. Parcels are treated to an extended two year maturation before assembling into the finished wine. Alcohol 14.2%
 
Deep, deep cherry red/ purple colour. Spiced earth and chocolate nose, cloves, fruit cake and alpine pepper. Complex, full bodied, ripe and spicy plum palate, cloves and raspberry flavours are balanced by cool climate pepper. Vanillin oak characters over a firm, lengthy backbone of rich, almost viscous, tannin before a tight, lingering finish. To accompany scotch fillet with wattle pepper and red wine jus.
