William Lyne arrived in Van Diemen's Land on October of 1826. His descendants established Spring Vale in 1875 and have pursued farming ventures in this beautiful area of Tasmania's east coast ever since. Rodney and Lyn Lyne planted 6.6 hectares of vine at Spring Vale, principally Pinot Noir in 1986. Further plantings were made in the following years, more Pinot Noir and more Pinot Noir again, with a splash of Pinot Meunier for variety. Today, Spring Vale can lay claim to the most coveted editions of Van Diemen's Land Pinot Noir.

The final cut of Pinot Noir is made up of approximately twenty individual components, all of which represent different clones, different vineyard blocks, different rows on various parts of the blocks, a choice of yeasts, varying fermentation temperatures and a number selections of oak. Grapes are destemmed into open pots for a few days of cold soak, inoculated with yeasts RC212 and treated to a regular plunge throughout the vinification to gently extract tannins. Upon completion to dryness, batches are pressed to a high proportion of new French oak barriques for nine months maturation.

Medium cherry colour. Aromatic nose of lavender and allspice, dried herbs and subtle toasty oak. Seamless, rich, dark cherry flavour on a sweet middle palate, a fine line running from front to back. Abundance of fine and even, powdery tannins before a long, balanced finish. An elegant style with deceptively easy to appreciate complexity.

Sourced almost entirely off an exciting new vineyard on Tasmania's beatified east coast, a small parcel of wild fermented Pinot Meunier is included for elegance and complexity. Eight different clones are individually husbanded to provide a cornucoppia of flavour and tannin profiles. Melrose has been fashioned to a lighter styling, similar to a well structured Beaujolais Grand Cru, with delicacy and sweet fruit being the key features. An engaging Pinot wine exuding freshly picked strawberry and raspberry fragrances, enhanced by a subtle treatment of fine French oak.

Almost two centuries later, Rodney and Lyn Lyne planted vines on a property called Melrose with the intention of producing world class Pinot Noir. Parcels are inoculated as berries are dispersed through the crusher destemmer, for rapid onset, minimizing skin contacts and avoiding excessive tannin extraction for a lighter style of Pinot Noir. Lactic acid bacteria strains thrive in the warm ferments, enabling early completion of malolactic and softer mouthfeel. Batches are drained after a week and the skins lightly pressed, assembled and racked, sulphured, lightly fined and crossflow filtered.

Medium garnet colour. The nose is packed with red berries and confectionery, an earthy undertone with hints of mushroom and funk due to Pinot Meunier. A juicy, soft, silky palate seals the deal in this early drinking, delicately structured, light to medium bodied Pinot Noir with a plump, juicy middle palate and soft, lingering finish, bright, uncomplicated and delightfully youthful.

Originally established in the nineteenth century, essentially on the basis of its magnificent wine growing potential, St Hubert remains to this day one of the finest viticultural sites in Yarra Valley. Vines are all managed by hand and the fortuitous mesoclimes yield the finest fruit. The property enjoys a long tradition for splendid Pinot Noir, recent show successes include back to back wins as best Pinot Noir at the Yarra Valley wine show.

$3499each $419DOZEN EACH DOZEN St Huberts are blessed by the most favourable winegrowing conditions in Yarra Valley. The land is gently sloping, maximizing drainage and preventing vines from getting wet feet, allowing an even spring growth and greater vine balance. The northwest aspect maximises exposure to the sun, vital for slow, even ripening and good acid retention within a cool climate region. Vines are all hand pruned, extremely labour intensive but it achieves harvests of the finest wine grapes. Pinot Noir is hand picked and vinified in small, open fermenters, using whole bunches to add complexity. Upon completion, the finished wine is matured in a selection of new and seasoned, exclusively French oak barriques.

Medium red with crimson hues. Fruit characters of dark cherries and macerated plum, overlayed with earthy, forest floor notes. These are complexed by spicey oak and some stalky aromas from whole bunch inclusion. A lovely example of Yarra Valley Pinot Noir with fleshy cherries and red berries to the palate, medium bodied with a round middle palate and soft velvety tannins. Spicey oak, with a little toast adds length to the finish.

Meet the biggest personality in Pinot Noir to come out of Yarra Valley, Hubert the Stag. With a history dating back to 1862, it's suffice to say St Hubert know from good Yarra Valley Pinot Noir. Vines are planted to some of the most fortuitous aspects in Victoria, closely husbanded to yield limited harvests of the most splendid fruit. The St Huberts team craft the Stag to be unpretentious and approachable yet exuberant and bright, affable and urbane yet packed with character and charm. Everything that fine Yarra Valley Pinot Noir should be and nothing it should not.

At St Huberts, the job is made a little more rewarding by the bounties of the soil, well drained clays and loams which are relatively deficient in some nutrients, keeping the vines from becoming overly vigorous, perfect for Pinot Noir. Fertilizer is applied every two or three years to replace the nutrients that the vines take out of the soil. The overall objective is to maximize the potential of one of the best vineyard sites in the Yarra Valley. The Stag is vinified in small, open fermenters, including whole bunches to add complexity, followed by several months maturation in a mix of seasoned and new French oak barrels.

Bright red with crimson hues. Attractive macerated dark berry fruits and ripe cherry notes on the bouquet mingle with underlying game and spice characters followed by a hint of oak. Soft fleshy fruit notes follow, the structure is light to medium bodied, the palate is framed by subtle dusty tannins. Hints of oak and plum persist on the finish. A fruit driven style with enough complexity to entice most Pinot lovers to enjoy everyday.
