An assemblage of superior clones Pinot Noir, picked off the Mudhouse estate vineyard in the Bendigo precinct of Central Otago. A challenging site to grow fruit, vines are planted to three terraces with slightly differing microclimes, encouraging grapes to achieve an allsort of complexity and tannin profile. A measure of whole bunch inclusion builds texture and infuses layers of flavour, a soundly structured and well proportioned Pinot Noir with the palate weight and depth of fruit to accompany traditional roast with root vegetables and red wine Jus.

$2999each $359DOZEN EACH DOZEN Free draining loam soils over schist gravel make the property ideal for harvests of outstanding Pinot Noir. The huge diurnal temperature variation adds to the structure and concentration of the wine. Grapes are gently de stemmed, allowing whole berries to remain intact. After a week of cold soak, each parcel is separately vinified through mix of wild and cultured yeasts. Batches are hand plunged for optimal extraction of colour, flavour and tannin. Ferments are pressed into a selection of seasoned and new French oak barrels for completion of malolactic and a term of maturation before assemblage into the finished wine.

Ruby red colour. Aromas of dark cherry and berry fruits, spice, floral and dried herbs over a background of well intergrated oak. A smooth palate of dark cherry and bramble flavours, fine tannins in support, before an exquisite finish on a length of lingering black cherry flavours and balanced, raspberry acidity. Mumm's elegant stream of bubbles rises to form a rich, lively foam, the nose develops aromas of lemon and grapefruit, with notes of white peach, apricot and acidulous apple. Lovely intensity of toasted brioche and lemon tart aromas with a waft of red berries. Lingering notes of vanilla, dried fruit and honey. A touch of acidity and remarkable length before a delightful finish.

Each kept separate from picking until the must reaches the vats. The final assemblage is complemented by a component of reserves from the G.H. Mumm stocks to add maturity and richness. The wine is then bottled for secondary fermentation, followed by maturation under the G.H. Mumm cellars for at least three years before disgorgement and a complex liqueur de dosage.

An intriguing cépage of black and white varietals from a single superior site in Gibbston Valley. A half of early picked Gewurztraminer, destemmed into seasoned oak puncheons for ten days maceration before the inclusion of Pinot Gris, vinified by wild yeasts on skins over the course of a fortnight, until complete dryness. A tenth of carbonic ferment Pinot Noir is introduced for richness and complexity, tannin structure and rakish pink hues. Juicy bouquet of guava, gingers and quince, brimming with a bevy of south sea fruits, nutmeg and allspice on the exhileratingly bright refreshing finish.
