Schild Estate Sparkling Shiraz

Satisfying the growing resurgence amongst enthusiasts of grand Barossa Shiraz, for fully flavoured robust sparkling red wines, Schild are a boutique, father to son estate, who have been releasing vintages of impressive international repute. Sparkling red wines have been a Schild family tradition from the very beginning, the luscious dark berry flavours and elegant tannins of Lyndoch grown Shiraz, make a deeply indulgent effervescent wine that's the ideal match to dressed game or richly liqueured desserts.

The Schild Estate vineyards sprout Shiraz grown to vines planted by the earliest Barossa settlers. Slightly cooler than its northern neighbour, the southern end of the Barossa Valley is perfect for growing Shiraz vines capable of providing lush, generous fruit, ideal for the production of sparkling Shiraz. A single vineyard wine from a small parcel on the estate Aherns vineyard near Lyndoch, harvested in mid March each year, destemmed and left on skins over several days for extraction. Juices are vinified in open top fermenters and allowed to develop for a year in seasoned French and American oak hogsheads. The wine is then put through a secondary fermentation and doseaged prior to bottling.
 
Dark cherry red, persistent mousse. Rich and inviting aromas of blackberry, dark plums, cherries, chocolate and licorice. Vibrant berry fruits and pepper spice are supported by a soft tannin structure with balanced acid and sweetness giving the wine a fine bead and creamy, elegant mouthfeel. Schild is an ultra fine example of a uniquely Australian winestyle, the finish is fresh, plush and lingering.
Segura Viudas Aria Brut

The Segura Viudas wineworks at Penedes date back to the 11th century. An ancient watchtower of diverse architectural styles, Gothic, Visigothic and Romanesque, it was converted circa 13th century into a stately manor for the purpose of managing local agriculture and viticulture. At the end of the 19th century, the region became self aware of it's potential and applied Methode champenoise to the local grape varieties. Aria Brut Nature is a mature wine with heady mousse, beguilling aromas and satisfyingly, cleansing finish.

From it's earliest days, the remarkable appeal of Segura Viudas drove an unprecedented demand that exhausted the limited production of the ancient tower at Penedes. Today, Aria Brut Nature is enjoyed everywhere around the globe. An assemblage of Macabeo, Xarelo-lo and Parellada grapes, inoculated to unique strains of yeast which have developed at the Segura Viudas cellars over the centuries. A controlled fermentation at low temperatures, remaining in contact with yeast sediments and musts, enhancing the complexity and infusing the wine with vivacious characters. Segura Viudas has been treated to an extended maturation, between two and three years within it's own bottle. Alcohol 11.5%
 
Straw yellow in colour, greenish hints, a good mousse and fine, persistent bubbles. Aromas of lemon and rind, citrus and pith, dried florals. The bouquet offers handsome aged characters, mustyness and toast, macadamia and dates. A hint of sweetness to the palate, crisp green apple flavours, compotes and grapefruit, nuances of quince and of fig, a mouthfeel of sorbet. Finishes long, crisp and food friendly.

An ancient marque steeped in history, Segura Viudas began branding it's sparklings in the 1950s, limiting production for the enjoyment of an exclusive clientele, not releasing commercial quantities until 1969. The Penedes Denominaciones de Origen produces amazing methode champenoise, crafted from a mix of indigenous Spanish varietals which are unavailable anywhere else in the world.

Two thirds Macabeo, the balance Parellada, sourced from the Penedes D.O, just south of Barcelona. Outstanding wines have been made here since the ancient Phoenicians, Greeks and Romans. Other notable Penedes producers include Freixenet, Rene Barbier and Torres. Towards the end of the nineteenth century, the region became aware of the potential of it's indigenous varietal grapes and unique wines, the first steps were taken in the application of Methode Champenoise and Segura Viudas produced its first sparklers. Primary fermentations in tank capture and retain distinct varietal fruit characters, followed by extended maturation in bottle for five years.
 
A delicate stream of very fine bubbles with persistence. Fruity, crisp lemon lime scented nose, the high percentage of Macabeo works to retain the youthful personality of this generous wine during the long ageing process. Development in bottle brings solid structure, creamy texture and harmonious acidity. Potent aromas vary from shortbread to strawberry, peaches to almond and marzipan. A long and elegant palate, a long slightly yeasty finish.

The dedicated vignerons at Seppeltsfield are very fond of a few choice parcels which grow an intensely flavoured Moscato. This is the vineyard block they call upon to fashion a very favourite drink, the elixir that revitalizes and refreshes at the end of a hard day's work. Fully ripe grapes, bursting with a concentration of juicy flavours are vinified to retain a toothsome natural sweetness. The sybarites of Seppeltsfield are people of passion, they are partisans of the rich moreish styles and indulge in the making of a Moscato that they themselves enjoy.

The pictuesque Plunkett Fowles vineyards occupy choice sites throughout the rolling plateaux at the heights of the Strathbogie Ranges. The quality of Pinot Noir and Chardonnay grown here are clearly within the Ivy League of the finest Victorian fruit. An assemblage of roughly equaly proportions Chardonnay and Pinot Noir. The white grapes share their origin equally between a variety of blocks within the Plunkett Fowles Upton Run and Whitegate Vineyards. The black grapes are drawn exclusively from the Trevor's Block at Whitegate.

Grapes are picked early and harvested throughout the cool of the night to ensure fruit temperature are low , thereby preserving primary fruit characters. The Pinot Noir grapes were whole bunch pressed, a process which minimises phenollic extraction and bitterness, leading to a more delicate wine. Batches are inoculated to culture EC1118, a strong competitive yeast which possesses the ability to ferment at low temperatures, create good flocculation and has excellent alcohol tolerance. Vinified in tank at 15ËšC to preserve primary fruit flavours, fermented to dryness, the wine was kept on its lees to add complexity. Stone Dwellers was held on secondary fermentation lees for a short period prior to bottling.
 
Lively appearance, creamy and long lasting with a continual fine bread. Bouquet shows bright citrus aromas with peach notes and some yeasty complexity. It has off-dry residual sugar, balanced alcohol, soft balanced tannins and refreshing acid. To accompany hors d'oeuvre, a pungent camembert or smoked mussels.
