A decidedly cold climate style of Shiraz from some of the chilliest terroirs in the land. Dominated by Grenache, with slightly lesser components of Syrah and Mouvedre, off vines planted to alluvial alpine deposits and rolled pebbles over a former sea bed of the miocene epoch. An assemblage of estate grown fruit, with parcels from a seven hectare property to the west of Chateau Beaucastel and salubrious sites near the center of the village at Chateauneuf-du-Pape. Batches are vinfied according to the exacting Beaucastel technique of destemming and warming the fruit before treating the musts to a traditional south Rhone style of ferment.

The estate vineyards are nourished by a compost of sheep's manure and the previous year's pressings which maintain humus content and microbiological equilibrium. Harvest is all done by hand, only the best grapes are sorted and vinified. Varietals are handled separately, the aim being to preserve the individual qualities of fruit and terroir. Components are transferred to large barrels where a racking disturbs it's repose from time to time. Matured in seasoned French oak casks for a year, the wine prepares itself, evolving and maturing until time for assemblage, a light fining and filtration.

Deep ruby colour with violet hues. The nose is very intense on ripe fruits, toast and vanilla from elegant ageing. Characters of lavender and mint leaf are present, within a deeply cherried and cassis palate, evoking impressions of earth, peppercorn and herbs. The mouthfeel is supple and round exhibiting fine structure and stately tannins. A beautiful Chateauneuf Du Pape, striking the balance between maturity of vine and freshness of fruit.

The essential Cotes du Rhone cepage, crafted almost exclusively from the Grenache of Grand Prebois and Syrah of Vinsobres. The inclusion of Mourverdre completes the holy trinty while contributing savouryness and pastoral charm. Filled with the fragrant fruit of Vallee Rhone and Mistral spice of Provence, Perrin Reserve makes a match with continental style grills and crumbed veal, slow braised joints and ham.

To this day they retain the choicest parcels to vinify into exemplary regional wines. Parcels of Grenache, Mourvedre and Syrah are sourced from Perrin estate properties at Grand Prebois and Vinsobres, as well as fine vineyards leased under long term contract. Within and around Grand Prebois, the soils are limestone gravel clays. Vinsobres is rich in quartz and limestone marls. Following the harvest, bunches are destemmed, followed by temperature controlled vinification. Batches are treated to a year's maturation in a combination of unwooded vats and seasoned oak Foudres before egg white fining and bottling.

Deep red colour The nose is all ripe fruits, plums and blackcurrant, liquorice characters, gingerbread hints and notes of violet The mouth is round, elegant, juicy and supple, with a predominance of fragrant liquorice, the tannins are polished and soft. A beautiful rendition of Cotes du Rhone GSM to enjoy today alongside lamb, gruyere or pissaladiere d'aubergine.

Fire Block was excised from a large grazing property in 1923, out of concern that sparks from passing locomotives on the new Clare Valley railway could start bushfires. Situated on the western slope of the Valley, established to vines in 1926, the gnarled old veterans of Fire Block are grown to traditional dryland viticulture, with no systemic sprays or chemical fertilizers. From one of the most parched sites in Valley Clare, the vines sprout bunches of tiny shrivelled berries, yielding small volumes of intensely flavoured juices, to be vinified by the eminent O'Leary Walker winemaking team.

Selective hand pruning yields a harvest of small, concentrated berries full of colour and flavour. The precious parcels of distinguished, sixty to eighty years old McLaren Vale vines are treated to an old fashioned maceration and vinification in traditional open fermenters, followed by a press and fill to a selection of seasoned French and American oak puncheons, purposely chosen for the task on the basis of spicey oaken characters and sweet tannin profiles.

Bright cherry red. Perfumed confectionary lift of raspberry and cerise, mulberries and hints of musk, ginger nut biscuits, cinnamon, nutmegs and clove.
