Rutherglen is possibly the only productive enclave of world class Durif wines anywhere on earth. It also yields a quality of Shiraz that's unique in the world of wine, by virtue of the region's phyloxera and quarantine of vines. The Morris family have been making wine at Rutherglen since 1859. Within thirty years of establishment, their flourishing operations had made Morris the largest wine producer in the southern hemisphere. Introductions aside, Morris make an effervescent red wine of remarkable intensity, profound richness and sheer class.

Morris draw upon barrels of maturing stock from across several vintages to assemble a generously flavoured yet brilliantly integrated red wine, before initiating a secondary bottle fermentation and liqueur doseage. Historically Shiraz has been the variety used in Australian sparkling reds, but by adding components of the world renowned Rutherglen Durif, extra complexity and balance has been imparted to the flavour. A range of older vintages are balanced against younger wines, which are used to provide the fruit lift. After assembling all components, the wine is bottled with an addition of Rutherglen yeast and allowed twelve to eighteen months contact before disgorging and resealing under tirage.
 
Crimson, a generous purple mousse. Rich fruit bouquets, Shiraz spice, yeast complexity and a hint of oak maturation. Rich and full flavoured palate, plum and blackberry and fruit jam flavours, chocolates and dusty carob over gentle, soft tannins. The powerful flavours linger long, complex and rich, a strawberry tang and licorice spice balance the excellent sweetness.

From the highest elevation vineyards in King Valley, up to 860 metres, the chilly climes extend the ripening for full development of crisp, elegant flavours. Treated to an extended term of twenty three months bottle age on sedimentery yeast lees, a choice component is sent to seasoned oak barrels for a course of maturation and added complexity. A finely beaded style of delicate zest perfumes, almond pralines and strawberry over supple rose floral, the palate is finely structured with an underlying core of fresh citrus acidity that drives through to the finish.

Choice parcels of Chardonnay and Pinot Noir are sourced from cool climate vineyards throughout the King, Ovens and Yarra Valleys, to produce a fresh and juicy, fruit driven sparkling wine. Redbank's winemaking team works closely throughout the year with a dedicated community of independent growers. These small family operated vineyards harvest fruit from vines grown to widely varied terroirs and microclimes. Unique soil and altitude differences provide Redbank with an opportunity to create distinctive wines. Emily is a blend of effervescent Cuvees, assembled to present a fresh and delightful Pinot Chardonnay, to be enjoyed at every ocassion.
 
Pale straw hues, persistent bead. Enticing lemon and green apple aromas, nuances of tropical fruit and fine, toasty, nutty notes. A long creamy palate combines the elegance of delicious pear and vanilla with delicate spice, subtle toast and yeast flavours are entwined by lemon citrus and fine crunchy fruits all supported by the underlying peach and nuttiness of Chardonnay.The finish is pleasingly fruit driven and dry.

Stone Dwellers Sparkling Pinot Chardonnay

The pictuesque Plunkett Fowles vineyards occupy choice sites throughout the rolling plateaux at the heights of the Strathbogie Ranges. The quality of Pinot Noir and Chardonnay grown here are clearly within the Ivy League of the finest Victorian fruit. An assemblage of roughly equaly proportions Chardonnay and Pinot Noir. The white grapes share their origin equally between a variety of blocks within the Plunkett Fowles Upton Run and Whitegate Vineyards. The black grapes are drawn exclusively from the Trevor's Block at Whitegate.

Grapes are picked early and harvested throughout the cool of the night to ensure fruit temperature are low , thereby preserving primary fruit characters. The Pinot Noir grapes were whole bunch pressed, a process which minimises phenollic extraction and bitterness, leading to a more delicate wine. Batches are inoculated to culture EC1118, a strong competitive yeast which possesses the ability to ferment at low temperatures, create good flocculation and has excellent alcohol tolerance. Vinified in tank at 15ËšC to preserve primary fruit flavours, fermented to dryness, the wine was kept on its lees to add complexity. Stone Dwellers was held on secondary fermentation lees for a short period prior to bottling.
 
Lively appearance, creamy and long lasting with a continual fine bread. Bouquet shows bright citrus aromas with peach notes and some yeasty complexity. It has off-dry residual sugar, balanced alcohol, soft balanced tannins and refreshing acid. To accompany hors d'oeuvre, a pungent camembert or smoked mussels.
