Excellent Langtons Classification. A long and extended growing season means that the Mount Langhi property is one of the last blocks to be harvested in Victoria. Also of significance is that only the best berries are carefully picked off the precious old vines. The famous Langhi Ghiran is fermented in traditional open, shallow, concrete tanks, before ageing in a selection of the finest oak barrels. It is the strong synergy between a unique microclime, fastidious viticulture and proficiency at winemaking that can achieve the paragon which is Langi Ghiran.

Langhi Ghiran is selectively hand picked from the iconic Langi Old Block, grown to granitic sand over red clay podzols, established 1963 to the Swiss Clone Shiraz. By hand selecting the choicest grapes from these old vines, the finest parcels can be marked for inclusion. This method leaves a considerable portion of grapes on the vine, but avoids any shriveled or unripened berries. Moreover, this process responds to the natural variation within the vineyard block caused by aspect, warmth and exposure to wind and sunlight. After a course of hand plunging over three weeks skin contact and fermentation completely to dry, Langhi Ghiran is matured in a selection of seasoned and new French oak barriques.
 
Vibrant purple with dense purple rim. A complex wine showing blueberry, rapsberry and requisite Langi spice. Delicately perfumed, Langi Ghiran is lifted and with complex spice elements. Medium bodied, tightly wound acid balance with structured tannins which build on the palate. A core of ripe blueberry and raspberry fruits, overlayed by hints of perfumed spice box characters. Tight acidity adds definition and length.

Within Paringa's superlative Mornington estate property, lie three precious blocks of vine, yielding unique harvests of the most extraordinary Shiraz. Each parcel is picked on the specific day determined by individual ripeness, to be separately vinified in a bespoke manner, aimed at preserving the individual character of terroir. Assembled into a wine of balance, power and restraint, Paringa articulates the cool climate compexity and fragrant cherry spice of Mornington, while offering the substantive structure and chocolate fruit richness of extra fine Shiraz.

Lindsay and Margaret McCall began their incredible journey in 1984, with the purchase of a derelict orchard on Paringa Road at Red Hill. Their requirements included north facing slopes, a permanent running creek and adequate wind protection. The vines were established to a distinctly unique Lyre or U trellis system, employing an elaborate steel frame assembly. The site is now producing harvests of Mornington Peninsula's finest fruit. Bunches of Shiraz are destemmed into traditional, two tonnes open top fermenters. Upon completion, batches are racked to a selection of seasoned and new French oak barriques for eighteen months maturation.
 
Purple scarlet colour. The distinctive cracked black pepper/ spice characters of Shiraz, plums, brambleberry and notes of cassis. On the palate, spicy blackberry and plum fruit flavours are supported by a length of firm yet soft, fine grained tannins. This is one of Mornington's finest renderings of Shiraz, a wine that will continue to evolve, yet can be enjoyed young alongside the finest cuisine.

Paringa Estate has established an unassailable repute over the last twenty years as one of the leading small winery vineyards in the country, named Australian Winery of the Year by James Halliday. Paringa Shiraz won a total of six trophies including Best of Show at the 2006 Royal Sydney, sweeping the field with five Gold Medals and five Trophies, including the prestigious Best of Show and Best Shiraz at the 2009 Royal Sydney, as well as Best Shiraz Trophy Royal Melbourne. Vintage 2007 has claimed a total of five Gold Medals to date.

The vineyard is set to a distinctly unique Lyre or U trellis system employing an elaborate steel frame assembly, and is now producing some of the Mornington Peninsula's best quality fruit. Fermentation of the exclusively estate grown Shiraz is carried out in three tonnes open steel pots, exactingly handled to the most adroit vinification techniques. Each component is then barrel aged in a combination of new and prior use French oak barriques.
 
Deep scarlet colour with darker robes. Bouquet offers the distinctive estate cracked black pepper/ spice characters combined with ripe plum and berry aromatics. On the palate, spicy blackberry and plum fruit flavours are supported by firm fine grained tannins that will soften with bottle development. In 375ml size is drinking beautifully, can be enjoyed young with the finest food and will evolve promptly with cellaring.

Marc Scalzo takes time out from his duties as chief winemaker at Rutherglen Estates to tend his closely coddled Beechworth vines. The two regions share a predisposition to yield structured Shiraz of remarkable purity and finesse, wines that are highly articulate of their very special terroir. The mineral rich hills of Beechworth impart added elegance and a conspicuous measure of Burgundian savoir faire. There are precious few plantings on Harry's Block but they yield the most invaluable fruit, immaculately crafted into the first growth of Beechworth Shiraz.

Shiraz is hand picked over the course of a single day, grapes are sorted and gently crushed, a large part of the fruit remains uncrushed, a further component is included as whole bunches. Parcels are treated to a traditional open vat fermentation through the action of wild, indigenous vineyard yeasts over the course of a fortnight, gently hand plunged four times daily for optimal extraction of flavour and tannin. Upon completion, batches are pressed and filled to an extravagantly high selection of new French oak barriques for twenty months maturation and bottling after minimal filtration.
 
Dark scarlet red. A fragrant bouquet of fresh milled pepper and cool climate spice, dark cherries and blueberry notes, minaret of anise and the mineral richness of a splendid terroir. A palate brimming with complex red berries, brambles, cocoa and baking spice over a framework of chalky velvet tannins and seamless, inseparable oak. A refined, lengthy, elegant finish.

Dominic and Krystina Morris have spent many years working consecutive vintages in Australia and Europe. They chose the Bendigo region to plant a vineyard with varietials that they were passionate about. A highly capable winemaking team together, both bring to Pondalowie unique skills and experiences gained from their backgrounds in the wine industry. Krystina has a degree in Oenology from Adelaide University and has worked as a winemaker in the Barossa and McLaren Vale, as well as in the Alentejo and Douro regions of Portugal. When the Douro Valley winery that Dominic worked for won International Red Wine of the Year, Dominic was invited to stay on and continue as star winemaker.
 
Deep scarlet in colour. The addition of Viognier adds elegance and seductiveness to the aromatics and transforms the tannins to silk without compromising any of the full bodied power and rich blackberry, dark cherry fruits and complex spices of the Shiraz. Pondalowie has fantastic palate structure, balance and length, matured in older oak barrels to retain the rich fruit concentration.

Blessed by the finest microclimes in Mornington, the Port Phillip property is a decidedly cooler suntrap amongst the undulating folds of scenic vistas near Red Hill. There are a mere half hectare of Port Phillip Shiraz vines, fully mature and cosseted with care, they yield the most engaging quality of harvest on the peninsula with each and every vintage. A wine of concentration, brooding fruit and evocative savouryness, the Shiraz of choice to decant and breathe, before service alongside charred meats, crackling pork or Chinese duck.

The viticulture at Port Phillip is proudly old fashioned, biological farming systems focus on the health of soil through the use of compost teas, mulches and natural plant conditioners. Grapes are all picked by hand and any questionable bunches are discarded. Shiraz is harvested and treated to a traditional old world vinification in a mix of open top concrete and wooden vessels, a portion of whole bunches are included in the macerations, inoculated to the action of wild indigenous yeasts, for three weeks of ferment. Upon completion, batches are filled to seasoned French oak barriques for spontaneous malolactic and sixteen months maturation, bottled without fining or filtration.
 
Deeply coloured. Cracked pepper and char, a complex mix of red and black fruits, wet forest, seasoned by charcuterie and lithe spice. The medium weight palate is laden with blackcurrant, mixed dark berry and fleshy plum flavours, a twist of milled pepper and trade spice, audacious, framed by cherry oak and supported by agile tannins, all the way to a long sustained finish.
