The Chardonnay and Pinot Noir grapes are carefully hand picked to minimise maceration of grape bunches during transport. The crates are placed in refrigerated rooms at 4C to minimise the amount of colour extracted from the red skinned Pinot Noir grapes during pressing. The whole bunches are then loaded directly into the bag press and gently squeezed to produce a clear, fine juice fraction. The juice is then clarified and inoculated with native Champagne yeasts to ferment at cool temperatures. The percentage of Pinot Noir in the blend has gradually been increased to 80% to give greater depth of flavour and increased aromatics. The assemblage spends twenty seven months on tirage before disgorgement and liqueuring.

Wonderfully effervescent, copper hues. Exhibits yeast and biscuit aromas, hazelnut and brioche, combined with ripe strawberry and rose petal notes. A rich and generous palate shows flavours of bread dough, strawberry and oyster, with a lean acid backbone from its cool climate fruit origins and a lingering creamy mouth feel due to extended time on lees. Elegance and finesse, balanced with flavour and, above all, drinkability.
Grant Burge PX Black Apera
Barossa
The ultimate indulgence in the wickedly black, lusciously toothsome style of adults only Barossa fortified. It's all Pedro Ximenez, through and through, picked at the peak of sugar ripeness and spread out on slotted crates under the sun for a highly risque term of three weeks. The intensely parched grapes are like little treasure chests of extravagantly complex flavours, fermented to 17% alcohol, fortified with Grant Burge brandy and sent to a selection of small, well seasoned oak barrels for ten long years. Satiate but be warned, you can't untaste Black Apera PX, once countenanced, you will become obsessed.

Grant Burge's Corryton Park vineyard, one of the highest and coolest in the greater Barossa region, contributes most of the fruit. The balance is sourced from the finest Cabernet sites on the Barossa Valley floor. Harvest commences when the grapes achieve the ripest and most optimal Baume. Shadrach is treated to a traditional vinification in open static fermenters for a week, a portion of fruit is left on skins for an extended maceration developing structure and longevity. The balance completes primary and malolactic ferments in a selection of seasoned and new French oak barrels for twenty one months, followed by a term of two or three years in bottle before release.

Dark plum colour. Concentrated aromas of blackberry, liquorice and eucalypt with hints of choc-mint and vanilla bean. The palate is full bodied with complex bramble characters, plum and blueberry, cassis and the delicacy of mint, all spice and tobacco notes. A rich middle palate is followed by fine tannins and exceptional length. The epitome of grand Barossa Cabernet Sauvignon, to accompany the finest gourmandise.

The history of the Burge family and their long association with winemaking in the region can be traced back to March 1855% Throughout his career, Burge has been one of the most respected and innovative forces in the Australian wine industry. Chardonnay grapes are chilled and whole bunch pressed before a combination of cultured and natural indigenous yeast ferments ensue in a mix of seasoned and French oak hogsheads with solids to assist the mouthfeel. Smaller components are treated to vinification in controlled fermenters and a course of malolactic. Components are matured for eight months with regular stirring of lees to infuse complexity and build creamy palate texture.

Bright golden hues. Delicate aromas of citrus, white peaches and spice. The palate exhibits incredible balance, fruit flavours are fully integrated with lime acidity and a hint of creaminess provided by lees stirring. The balance creates a wine with superb length and refinement. Food matches such as spiced quail, roasted pork loin with fennel or seafood gumbo allow Summers Vineyard to fully express itself.

Grapes are hand picked at healthy levels of baume, to construct a wine of delicacy and finesse. The earlier long cool ripening period of Eden Valley provides outstanding growing conditions and is the raison d'être for some of Australia's most internationally renowned Riesling wines. Half of the fruit is whole bunch pressed to maximise elegance, the balance is crushed directly into fermenters, the juices immediately drained to minimise skin contact. After two days of cold settling, the exclusively free run juices are racked and three cultured yeasts added to initiate a strictly temperature controlled fermentation at 11ºC. After six weeks rest on lees, the finished wine is racked and assembled for bottling.

Nearly a decade ago, Grant Burge embarked on his greatest venture since the introduction of Grant Burge Wines – the establishment of a stunning new vineyard on some of the highest land suitable for viticulture in South Australia. Just after the start of the new millennium, the first vines of Cabernet Sauvignon, Merlot and a smattering of Petit Verdot, were planted over part of an historic estate, Corryton Park near Mount Crawford, high above the southern end of the Barossa Valley.

The history of Corryton Park goes back more than 160 years when the land was first purchased in 1845 by noted South Australian pastoralist, Mr David Randall. Many owners later Grant Burge bought the property and, as he said at the time: “Corryton Park is being established as a 20 year project to produce premium wine grapes of great intensity and maturity. I have no illusions for this vineyard for at least another 10 years.†Today, the premium Cabernet Sauvignon fruit from Corryton Park is of such exceptional quality it has been chosen to form the backbone and heart of an iconic Grant Burge wine – his premium Cabernet Sauvignon, Shadrach. Already, the wine has been awarded trophies and heralded as one of the Top 100 wines in Australia.
