Charles Sturt University Winery represents the same environment as other commercial Australian wineries. CSU provides stimulating training for those students fortunate enough to be employed through winery scholarship. Being a fully market driven operation, it produces the quality and style of wines that obtain ready acceptance from discerning wine consumers in the open market place. Wines from the University Winery since 1977 have been awarded multi trophies, and hundreds of gold and silver medals in national wine shows. Most of the Chardonnay is fermented under strict temperature controls to retain the fresh fruit flavours. A further component has been fermented in new French oak for added complexity
 
Handsome straw yellow in colour. Aromas of peach and nashi, assorted stonefruits and crunchy pear, wisps of vanilla and cashew, there are also greener elements like fuji apple and asparagus. The palate is lively and multi dimensional, offering not only very fine fruit, but super texture and mouthfeel from lees stiring. The flavours are all full and soft, with the melon and stone fruit characters dominating. The fresh fruit-driven nature of the wine co-exists ying and yang-like with the sweet and savoury elements of the oak. Nuances of cocoa and butter and chewy vanilla gum sit aside the orchardy complexity and quenching tropicalness. This is a fresh, fruit dominant wine with the right amount of woody hints, and a crisp acid finish

The winery demonstrates an accountable commercial operation and provides stimulating training for those students fortunate enough to be employed (through a winery scholarship ). The wines are sold through the Cellar Door at the Winery and in selected premium wine retail outlets in each capital city of Australia as well as limited quantities being exported to the United States. Since the re-organisation of the Winery Management in 1991 sales of CSU wine have grown from 3287 cases to a budgeted 15000 cases in 2001. The winery focuses on its own range of premium table, fortified and sparkling wines and since its inception in 1977 has been awarded 23 trophies, 84 gold, 164 silver and 387 bronze medals in national wine shows.
