Cabernet Sauvignon and Merlot are picked in the cool of the night to retain freshness of fruit. Once gently de-stemmed the grapes are fermented in static fermenters at 20ºC and pumped over three times daily. After vinification the batches were held on skins in tank for a further seven to ten days, which served to soften the gentle tannins. The wine was pressed and the parcels were transferred to a combination of finely coopered oak barrels for ageing and to enhance the complexity, treated to a series of rackings over a twelve month period. Following the maturation, Catching Thieves is assembled with a view to creating a seamless wine whilst retaining the varietal fruit characters. Approx 13.5%

Colour is brick red. Leafy aromatics, redcurrants and exciting wild berries, spicy, sultry fruit and supple cedary oak. A medium weight palate featuring delectable flavours of currant and mulberry, sweet and juicy. Plums and lively hints of violet with cassis cling at the edges, this is a delightful wine, the impeccable balance of fruit, kind tannins and comforting oak providing definition. A touch of cinnamon complements the fruit, as it rests upon a soft but supportive tannin structure. "What a super luncheony Margo river Cabernet merlot, all this for under twenty bucks? I matched a bottle with oven braised garlic lamb on papardelle and wore a smile for the rest of the day. Great stuff!" -Wine Mag.com.au

Catching Thieves pays homage to the daring, enterprising and creative personalities from stories such as To Catch a Thief, Modesty Blaise, and Catch Me if You Can. Paradoxically, the Catching Thieves wines are honest, reliable, and desirable. The maritime winds and sultry soils of the Margaret River are crucial to the Catching Thieves style of wine. The McWilliam vineyards here enjoy sensational ripening conditions right up to harvest. After a period of cold settling the juice is racked and fermentation initiated using a specially selected aromatic yeast, chosen to accentuate the primary fruit characters. Batches are vinified separately and assembled just prior to bottling. Approx 12.0%

Pale straw with light green hues. Intense snow pea and cut grass characters combine with elegant passionfruit and gooseberry notes. All the requisite Margaret River highlights of avocado and summer straw, green apples and sweet marjoram. There's great length to the flavours, in a refreshing table white which offers the inescapable charm of this classic regional blend. A crisp, clean palate with dominant passionfruit and stonefruit flavours, beautifully supported by a citrus acid backbone giving the wine lovely structure and a lingering, zesty finish. A super selection for the lunch table, highly suited to bistrot faire like chicken caesar or a pinenut, dill and cream linguine. Best consumed young, chilled and fresh
