Moppity have claimed many conspicuous accolades at national wine shows and international competitions. Their property sits at the highest elevation of the Hilltops region, its distinguished vines are among the eldest in the area, the source of fruit for many memorable vintages including the 2009 Jimmy Watson winner. Lock & Key is Moppity's entry level effort, a pure single vineyard Cabernet Sauvignon from mature, low yielding vines, fashioned to be approachable and satisfying for early drinking.

The Hilltops climate is cool to moderate, Moppity's vines are planted to dark red volcanic granitic clays, impregnated with basalt. Summer rainfall is low such that vine vigour can be readily controlled to optimise the quality of fruit. A long, even ripening period supports flavour development and underpins the intensity of the wines. Although early spring frost is an issue in the district, Moppity Vineyard is sited on undulating terrain, ensuring adequate frost drainage. Cabernet grapes are treated to a cold soak for the extraction of flavours, colour and tannin, followed by a fortnight of fermentation and a term of maturation in a selection of seasoned and new, French oak hogsheads and barriques.
 
Vibrant purple colour. Lifted dark berries with hints of mint and dried herbs. Palate displays a varietal integrity which belies its pricepoint. Packed with blackcurrant, cedar and forest fruits and a tannin structure that elevates it from the plethora of early drinking Cabernets. A very generous and stylish wine with beautiful balance that delivers incredible value for money, pair it off with lamb, oregano and roast vegetables.

Lock & Key unravels an elegant palate of abundant ripe cashew citrus characters, melon and stonefruit flavours.

Moppity are in full embrace of the philosophy that great wines are made in the vineyard. There's also nothing generic about Moppity's Lock & Key efforts, they reflect their unique geographic origins, the ultimate expression of soil and microclime. Every effort is made in the vineyard to achieve quality fruit. Minimal irrigation, bunch thinning and careful pruning ensure low yields of concentrated grapes, providing wines of compelling regional and varietal distinction. Parcels of Tumbarumba Chardonnay are isolated on the basis of pure varietal expression and intensity of flavour. Exclusively free run juices are treated to lees battonage and partially barrel fermented in a selection of fine French oak barriques.
 
Brilliant, clean, pale yellow colour. Bright and lifted with citrus, fig and nutty complexity. Best described as a new world Chablis, the palate is long and lean with citrus, white peach and excellent minerality before a spicy, nutty finish. Although partially fermented in French hogsheads, the oak plays a subtle background role, allowing the fruit to do the talking.
Moppity Lock Key Riesling

Lock & Key have placed Hilltops firmly on the map with their fresh and dry, fragrant articulation of Riesling. Viticulturally, the region can be summarised as Barossa meets the Grampians, translating into wines of power and concentration, enhanced by great elegance and finesse. Moppity Vineyards have claimed some of the most coveted accolades at significant wine competitions nationally and overseas. Complexed by stonefruits and lime, the clean, zippy finish, makes Lock & Key an excellent food wine.

The Moppity winemaking team make every effort in the vineyard to promote the quality of fruit. Minimal irrigation, bunch thinning and careful pruning ensure low yields of highly concentrated grapes, to achieve wines of great flavour intensity and regional varietal distinction. The Hilltops climate is cool to moderate and summer rainfall is low, a long, even ripening period supports flavour and colour development, underpinning the intensity of the wines. Parcels of single vineyard, estate grown Riesling grapes are crushed, before batches of exclusively free run juices are separated and treated to a temperature controlled cold fermentation and early bottling to capture and preserve the vital Riesling characters.
 
Pale straw colour. Highly aromatic style with exotic spicy notes and ripe limes. Fine, crisp and well balanced, making for an elegant wine with good persistence. The generous fruit is well tempered by fine, clean, bracing acidity, the palate is long and racy, culminating on a clean, zippy finish. Excellent and will continue to develop complex honey and toast characters. Enjoy with the freshest seafood or delicate white meats.
Moppity Lock Key Shiraz

Moppity are all about good wine from good fruit, selection of site is paramount and uncompromising standards of viticulture are essential. Lock & Key have embarrassed some pretty big names at conspicuous national wine show competitions, establishing Hilltops as the rising star growing appellation for Australian Shiraz. A rich, totally mouth filling wine with a deep, dark colour that's characteristic of Hilltops Shiraz. The palate is intense and concentrated, with loads of ripe dark berry, pepper and spiced cherry plum flavours.

Moppity Vineyard is a noteworthy producer of superfine Hilltops Shiraz and contributed fruit for the 2009 Jimmy Watson winner. Moppity's 170 acre property sits at the highest elevation in the Hilltops region and it's vines are among the eldest. There are multiple clones of each variety, including five clones of Shiraz, all featuring their own distinct characteristics. The advantage is a tremendous diversity in wine style depending on site, aspect, soil type and clone. Shiraz grapes are treated to a cold soak for the extraction of tannin, colours and flavour, followed by several days of ferment and a term of maturation in a selection of seasoned French oak hogsheads and barriques.
 
Deep, dark purple/ red in colour. Aromatic, perfumed, spicy with sweet red berry and cherry nuances. A soft and seamless, medium bodied, savoury expression of graphite and dark cherry, blackberry and a little briar, the palate is followed by fine acidity and drive, the freshness of fruit being a standout trait of this stylish, eminently drinkable Shiraz.
Moppity Lock Key Sparkling

Lock & Key is a reference to ancestors who were brought to New South Wales as convicts aboard Australia's second fleet. A generously proportioned Pinot Chardonnay, the first sparkling wine to be made from fruit grown to the blossoming Hilltops region. Moppity Vineyard's original plantings are nearing forty years of age, some of the oldest stock in southern New South Wales. These mature, low yielding vines don't deliver much fruit but the precious grapes are wonderfully concentrated and produce the most remarkable sparkling wine.

The Moppity team endeavour to promote the somewhereness of site. There's nothing generic about Lock & Key wines, they reflect unique geographic origins. Moppity Vineyard's microclimate is cool to moderate with a long, even ripening period, which supports flavour development and underpins the intensity of the wines. Although early spring frost is an issue, the property is sited on undulating terrain, ensuring adequate frost drainage. Chardonnay and Pinot Noir is harvested in the cool of night at optimum ripeness to preserve freshness of fruit. Only the cleanest free run juices are cold fermented to retain aromatics and primary fruit. A secondary fermentation is initiated at Peterson's Champagne House.
 
Bright, vibrant, pale straw with a very fine bead. Complex aromas of bright lemon, green apple and stonefruit. Citrus and stone fruit flavours prevail, the wine shows a creamy texture and fine natural acid. Lock & Key is a bright, lively vintage sparkling wine with plenty of fresh citrus flavour, a wonderful effervescence and a rich, creamy mouthfeel. An excellent sparkling wine fit for any occasion worth celebrating.

Hilltops is rapidly emerging as one of the most exciting viticultural regions in Australia. Viticulturally, the region can be summarised as Barossa meets the Grampians, power and concentration with elegance and finesse. The 170 acre Moppity Vineyard sits at the highest elevation in the Hilltops and the fully mature vines are among the oldest in the region. Moppity have embraced the philosophy that great wines are made in the vineyard. Moppity's team attempt to promote the somewhereness of site. There's nothing generic about the wines, they reflect unique geographic origins. Moppity wines are the ultimate expression of soil and micro-climate. They are different from the wines of other regions and different from the wines of other Hilltops producers.

Every effort is made in the vineyard to promote fruit quality. Minimal irrigation, bunch thinning and careful pruning ensures low yields of highly concentrated fruit, providing wines of great flavour intensity and regional and varietal distinction. The original plantings were established in the 1970s and are some of the oldest vines in southern New South Wales. Moppity's Reserve wines are typically sourced from the old, gnarly, low yielding vines. These old boys don't deliver much fruit but it's wonderfully concentrated. As they say, old vines make great wines!

The vineyard is situated on dark red volcanic granitic clays, impregnated with basalt. Moppity have 170 acres under vine spread over 450 acres of undulating terrain. Plantings include shiraz, cabernet sauvignon, merlot, nebbiolo, chardonnay, riesling, semillon and viognier.

There are multiple clones of each variety, five different shiraz clones as an example, each features distinct qualities. The result is a tremendous diversity in wine style depending on site, aspect, soil type and vine clone.

The vines generally have the benefit of a long, even ripening period - this supports flavour and colour development and underpins the intensity of Moppity's wines. Moppity's Reserve range is made in small quantities in only the very best years. The inaugural release in vintage 2006 was a Shiraz, which set the wine world alight winning top gold medal at the prestigious London International Wine Competition. The Estate range is sourced from the very finest fruit on the vineyard (unless a little makes the grade for the Reserve label). The focus is very much on quality and generally only around 5% of the crop will be allocated the the Estate range. No expense is spared in the winery and the wines have won numerous awards and critical acclaim. The Lock & Key range is named in reference to Jason Brown's 2nd fleet convict lineage and pays tribute to humble beginnings. They are single vineyard wines from mature, low yielding vines and represent remarkable value.
